Lubelski is produced with the addition of wild forest fruits to nectar honey. One litre of Półtorak mead contains 720 g of natural honey. Półtorak mead matures for several years to achieve full clarity. In time its rich aroma hides a high content of alcohol (16%) and acidity forming the finest liquor there is. It has a subtle though clearly discernible aroma.

This type of mead is produced from nectar honey. 1 litre of mead contains 420 g of natural honey. Trójniak contains 13% of alcohol. The maturation period is 2 years. This type of mead is produced from dark nectar honey with full flavour aroma. It also contains Alpine herbs which have mellowing properties.

This is likely the most complex, controversial and thought-provoking single-fruit mead Schramm’s has ever made. Aronia berries are a wild fruit native to the eastern United States. The flavor impact starts with unmistakably earthy notes of topsoil and grass clippings drenched in honey, and evolving into rich dark chocolate, a host of purple berries and currants, molasses and maple syrup, and finishing with firm but not unyielding tannins. Our Aronia Berry mead is a uniquely delicious and mesmerizing beverage.

Sourwood honey and Lacto

X Fume 2006 Riserva Teo Musso was brewed in 2006 and bottled in 2008. This begins as Xyauyu, with the added 18-day infusion of smoked Lapsang Suochong Tea. Editor’s note: as of 2012, 2008 vintages of Baladin Xyauyù Fumé are available; note the extended name (Xyauyù) and a the back label talking about whiskey barrel ageing; if you had such beer, put your rating there.

This mead explores the combination of strawberries, bananas, and chocolate. We took some of the "Yo Momma’s Strawberry Pizzazz" and added fresh ripe bananas and cocao nibs to it until it took on a nice balance of flavor. The nose is dominated by bananas and strawberries with a nice kiss of cocao coming through. It is a nice sweet mead with beautiful and subtle dark chocolate undertones from the cocao nibs. This Michigan wildflower mead is aged in an oak wine barrel with LOADS of rose hips. It has floral and citrus notes.

Sui Generis, which is #2 in our new Barrel-Aged Series, will debut at the Avery Tap Room on Wednesday, September 23rd from 3-8 PM. Due to extremely limited quantities of this brew (<150 cases will be produced), 12oz. single bottles will be sold only at the Avery Tap Room, between 3 PM and 8 PM on September 23rd. Sui Generis is a complex ale, aged and artfully blended from several types of oak barrels, and displays a delightful lactic sourness complimented by hints of brett, oak, and acetic. Intricate yet bold, deeply complex yet surprisingly refreshing, Sui Generis was crafted in the tradition of perennial Tap Room favorites De Vogelbekdieren and Voltron. A blend of ales from 39% Cabernet Sauvignon barrels, 35% Chardonnay barrels, 13% Port barrels and 13% Bourbon barrels.
