Duvil in Ms Jones

The Duvil in Miss Jones is a Sour Belgian Golden Ale. Brewed as an homage to the world-class Duvel, but with a twist, as in a lemony acidity that provides just enough tartness without being overbearing. Eisbock 28 is an ice processed winter warmer. This rich lager is aged for months at temperatures well below freezing and is a deep gold color and has a smooth and malty flavor with bittersweet complexities. This highly unique beer is unlike any other and to our knowledge Redhook is the only American Brewer currently brewing it. This traditional winter beer is very drinkable, even with its high alcohol content and is perfect before or after dinner.

The ice bock, also known as 'Bayrisch Gefrorns', owes its discovery to a coincidence. According to the chronicles of the Kulmbacher brewery, some time around 1900 an apprentice forgot on a cold winter day to carry two barrels of bock beer into the brewery cellar. The barrels stayed outside, were covered by ice and snow and weren’t discovered until the following spring. The barrels had burst and the apprentice was reprimanded. But the carelessness was a stroke of luck because under the thick ice coat, a bock beer extract remained, strong tasting and high in alcoholic content. Even if the dark, tasty speciality is not produced in this spectacular way anymore, the chance that gave birth to this beer became a tradition. Today this beer rarity is brewed in a modern brewing and freezing process, but the incomparable taste is still the same and can always be enjoyed in winter months.

"The anniversary beer from Upright Brewing is... a barrel-aged dark rye saison with raspberries. If you're wondering what Upright "Eight" is, it's a batch of the Six that was fermented with a different yeast strain that fermented over the top of the open tank, losing wort and finishing at a much higher gravity."

Electric Ray: India Pale Lager (Beer Camp Across America)

As ever, San Diego’s Ballast Point looked to the sea for the inspiration behind Electric Ray. A play on the fish’s scientific name—Torpedo californica—this beer pays homage to our mutual home state, as well as to our Hop Torpedo, the source of much of the big flavor in this high voltage, hop-forward Imperial Pale Lager. Ballast Point brought their homebrewing dreams to the big leagues and started brewing professionally, but they never forgot their roots. They still run a successful homebrewing supply shop in San Diego. A love for hops and the ocean inspire incredible brewed and distilled offerings, and their one-of-a-kind labels boast some beautiful, and sometimes gnarly-lookin’, fish.

Elements of Funk: Brettanomyces Lambicus

Near the end of last year, we began laying down a funky beat. One of four beats, to be precise. And this Friday, the final beat drops with the fourth and final installment in our Elements of Funk series - Elements of Funk: Brettanomyces Lambicus. The Elements of Funk series was designed to showcase the similarities and differences between four strains of Brettanomyces, which the cool kids call “brett”. To accomplish this, we started with a base beer that took inspiration from Saison de Lente, using a fairly simple malt bill, noble hops and familiar house yeast to leave the path to funk as unobstructed as possible. Following the base beer’s fermentation in stainless steel, we then sent one quarter of it to the brite tank at a time. Each quarter was inoculated and separately bottled with a different strain of Brettanomyces: lambicus, drei, claussenii and brux. While all four variants appear similar to the naked eye (and bottles should be chilled and opened with caution,) the nuances are many.

Originally a collaboration with 4 Hands called Square Grouper, now brewed by Pipeworks and called Emerald Grouper. Our buddies at Four Hands in St. Louis rang us up a couple of months ago with a proposition. They wanted to brew an Imperial IPA and they just happened to have a bunch of Simcoe, Citra, Galaxy and Mosaic hops. We though that sounded like a pretty good idea so they came on up here to Chicago and we did the damn thing. We also added 60 lbs of honey at the end of the boil. The beer that then flowed out of the tanks and into your bottles is a dank symphony of tropical fruit, citrus, mango, pine, fresh cut grass and stone fruit. This was only a single batch and may not make another appearance for a long time. Drink early Drink often.

Engel Weisse

The Angel of Shavano is an ancient snow pack formation on beautiful Mt. Shavano, the 14,000 foot peak that looks directly over our brewery in Poncha Springs. The Angel’s watchful eye has stood over the valley protecting everyone from Ute Indians, to gold miners, to modern day hikers and fisherman. Only visible in the spring and summer we decided to name our delightfully tart and sessionable barrel fermented Berliner Weisse, Engel Wiesse, in honor of this local landmark. So while sipping this beer from our beer garden one must simply look to the west to see the Angel of Shavano smiling down on you as you enjoy this delightful beer.
