Sonic Weapon

We brought together elements of an American brown ale with a subtle Belgian yeast strain to create the malty base beer. After aging in grape brandy barrels for over five months, we de-barreled and added cherry puree and bitter orange peel. After two weeks of aging on the fruit, this beer has come into its own and provides a unique drinking experience in replicating an Old-Fashioned cocktail in beer form

Workers Fate

We recently purchased some barrels that had not had any wine or spirit aged in them, two medium- and two heavy-toasted (they also have our logo laser-etched on the heads and they look great). We brewed up this best bitter and then, about 12 hours after fermentation had started, transferred the beer to the barrels to finish fermentation. After about a week, we transferred back to a stainless steel tank for maturation. The classic biscuity depth of the style is further accentuated by the kiss of the wood bringing in a warm nutty tone. We also used Yakima Gold hops grown in Colorado by our friends at High Wire Hop Farms in Paonia.

Patrons Project 8.04// New England Steam Lager

Before the lupulin party of Hop City kicked off, we hooked up with Berlin-based gypsy brewers' Fuerst Wiacek. Their beers had been impressing us for a while and so it was a delight to welcome them down to brew at the Old Flax Store. Lukas was keen to tackle a style he'd never tried before and we both wanted to put our hop-heavy stamp on the results, and so a New England Lager was born. The grist was classic to NE style and our lager yeast of choice was the San Francisco Steam strain, which ferments warmer like a lager and kicks out esters we felt would compliment the Enigma, Mosaic and Cashmere dry hop. Expect lemon, lime, dark berries and spice, a silky mouthfeel and a crisp, easy-drinking finish.

Raven Special Lager 20th Anniversary Premium Edition

We took our award winning flagship beer The Raven, jacked it up with more malt and hops but backed out the darker malts to lighten up the color and added Columbus hops to the boil. This gave us exactly what we wanted- more body, more mouth feel, some hoppiness balanced with the increase in malt, higher alcohol but with a much lighter colored beer that's deceptive when compared to our classic Raven Special Lager. Poe was always deceptive and seldom predicable. We showed this with our black Dark Usher, an unusual dark Kölsch that is as clean and light as any Kölsch and now Poe again comes true to form with this premium lager; visually light, but not light in taste and body. Light , but rich, full of flavor, a queer deception, typical of the master of the macabre.

San Franpsycho IPA

Brewed with 2-row pale, red wheat and acidulated malt, San Franpsycho® IPA pours a hazy golden straw color with a white fluffy head. The mouthfeel is creamy and smooth yet mildly effervescent with a hint of back-end tartness. San Franpsycho® IPA is fermented with a mixed culture of yeast to create a unique and fruity estery nose, unlike any other IPA from Anchor. Anchor brewers add peach and apricot fruit puree during the secondary fermentation, giving the beer a pleasant hint of sweetness and abundantly fruity aromas of peach, apricot, and pineapple with a bit of funky dank.
