Originally brewed as our hoppy welcome to Spring after the long, dark months of winter, this low ABV, kölsch inspired ale is cool fermented and dosed with Nelson Sauvin. Lower fermentation temperature slows the yeast's metabolism and provides balance by gently subduing super-fruity esters and spicy phenols. Sprang is refreshingly light bodied with aromatics of earthy evergreen, passion fruit, and faint doughy malt. Flavors of concord grape, mango, and herbaceous white wine interweave with cracker-crisp, pilsner malt character and minimal bitterness. The finish is dry with a lasting touch of grain.

We went to Oliver’s Cider in Hereford seeking their lees, the natural wild yeasts that ferment their apples into great traditional ciders. We brewed a robust Belgian-inspired golden ale at Thornbridge, added the lees in barrels, aged the beer for more than a year, and bottle conditioned it. Brewed in collaboration with Dark Water Studios who provided artwork and inspiration. The color and soft roast/coco character come from the addition of Midnight Wheat malt which is very dark but lacks the roasty "bite" of stouts and porters. We also use a bit of Munich malt for some toasty malt character and a little brown sugar for a hint of molasses. The beer is massively hopped with Mosaic and Citra hops for a pungent hop character with notes of grapefruit, berry, tangerine, melon, passion fruit, and pine.
