Burning Day Light

A vibrant and tropical IPA, Burning Daylight pairs the incredibly pineapple-saturated Galaxy hops from Australia with citrusy and fruity hops from the Pacific Northwest and New Zealand. A moderately assertive hop bitterness cuts through its wheat heavy grain bill that provides a subtle graininess without any apparent maltiness, sweetness, or excessive body; leaving the hops to be the star of the show. Your first whiff of this IPA will be dominated by massive amounts of mango, pineapple, and papaya; followed soon after by a unique mid-palate of peach, blueberry, and wine grape. As the sea of tropical fruit slowly washes past, you will be left with beautiful citrus flavors tickling across the center of your tongue. Clean and Crisp with an atom bomb of tropical aroma, Burning Daylight IPA was the first IPA we ever brewed here at Fieldwork, and will forever be one of our favorites.

Cocoanut Imperial Stout

When thinking about the most classic love stories of all time few are more quintessential than Romeo and Juliet, one of which being chocolate and coconut. Paying homage to this timely tale we married the two of them in a quaint chapel of an Imperial Stout; big enough to house their wedding without overshadowing their love and without distracting from the happy couple. As smooth as velvet and as roasty as your morning cup of joe, Cocoanut ushers heaps of hand toasted coconut down the aisle where it meets its perfect match, chocolate. A sweet aroma of coconut wafts through the glass begging you to attend sip after sip, until it dances with notes of milk chocolate across a classic Imperial Stout. Moderate amounts of dark roasted grain and complex British malts balance out this passionate couple making this a beer for the ages. Let your palate catch this decadent bouquet while you ring in one of Fieldwork's favorite new creations; the liquid German Chocolate Cake that we call Cocoanut Imperial Stout.

Grove Stand IIPA

A collision course of a few of our favorite hops, Grove Stand Double IPA is an absolute juice bomb of a beer. Before this beer even parks in front of you, you'll smell it coming, a rocket launcher of pineapple juice and orange marmalade explode your senses, followed up with an assault of even more fresh cut pineapple, overripe mango, and a hint of orange pith. The perfect amount of body and slick oat-induced mouthfeel supports all of these juicy hop flavors, yet still remains incredibly refreshing and terrifyingly crushable for being a beer that weighs in at 9%. Finishing moderately sticky and dissipating ever so slowly, this Grove Stand Double IPA tastes like you should be able to find it next to a carton of Dole at your local market.

Painted Gold

Painted Gold is the Pale Ale you want to throw in a cooler and take with you on tour all summer. Pale gold in color with a hop haze that taunts you to pay admission and give it a go, lead quickly to aromas of grapefruit, peach, and lime that strum across the senses in perfect harmony. Toss some of that pint back and notes of lime zest and grapefruit pith clamp down on your palate like a capo; blending every so subtly with its hop saturated grainy saddle. The dry finish and spritzy carbonation enables the heavy citrus heart of this beer to come back for multiple encores without ever playing out of tune. Made in honor of our friends in The Brothers Comatose and their incredible music, we hope Painted Gold Pale Ale does them justice and is the kind of beer that turns pop-country into bluegrass and a violin into a fiddle.

Pulp Free

Pulp Free is not your typical Fieldwork IPA; originating from our first foray into the murk craze it never quite felt right in our dartboard of a beer lineup, and was thusly reinvented with added clarity and increased bitterness, resulting in the Westcoast version of its namesake PULP IPA. While PULP exemplifies what we want in a Northeast IPA, we figured Pulp Free could do just the same for us in the world of Westcoast. High bitterness, excessive dryness, and the same over-the-top dry-hopping of Citra hops deliver the expected Fieldwork flavor profile and explosive aroma in a San Diego package. The abundance of Citra hops create an aggressive aroma that smells like a drive through a citrus orchard in peak of season, with notes of fresh orange, yellow grapefruit, and juicy sweet mango trekking from the first sniff to the last sip. Pulp Free IPA delivers just what we miss about the Wescoast IPAs of yore; enamel peeling hop character with a sledgehammer of aroma, and every bit as dry as East County San Diego in drought season.

Set Sail

Set Sail is our Pale Ale that travels between coasts taking what we consider a prototypical Northeast-style grainbill and fermentation profile, then smothering it with a quintessential West Coast hop profile. With a high a high content of oats and a hint of sweetness, the resinous elixir coats your palate with a chewy mouthfeel, and the slightest bit of stickiness on your lips. We opted for a soft bitterness to keep the juicy characteristics moving forward, but then continued on with a hop bill that we thought exemplified the best examples of a California Double IPA. Big notes of grapefruit permeate from the glass, hinting towards the citrus heavy flavor with zero restraint. As the explosion of grapefruit settles, an assertive resinous pine character bobs across your palate like a buoy in a storm with dank nugs of weed raining down on the sea. Set Sail Pale Ale is a beer that is equal parts form and function; using a hop profile inspired by one of our favorite Double IPAs in a much smaller form factor to ensure we can keep putting down the pints regardless of how long the voyage.

Torrential DIPA

Torrential is what we want in a Double IPA. It's big, dry, hugely aromatic, bursting with tropical-fruity hop flavors, balanced in bitterness, and terrifyingly drinkable. A mix of our base malt and a Belgian specialty malt gives the beer a small amount of malt character without adding any sweetness or coming off as anything other than a very west coast style Double IPA. The hops we chose to throw in the mix are a simple blend of our favorite hops that all on their own are hugely dominant in character, but when blended together they produce a beautiful marriage of mango, melon, grapefruit, papaya, orange, and jackfruit. Infinitely fruity and responsibly bittered, Torrential will overwhelm the palate with these bold and juicy flavors while remaining disturbingly crushable for a beer of its caliber. Designed with one thing in mind, which is creating Torrential to be our desert island Double IPA.

This one is all about the hops, over 9lbs per barrel! 95% Pale Malt and 5% dextrose give it a dry malt finish allowing all the hops shine through. We used Nelson Sauvin, Mosaic, Citra, Southern Cross, Equinox, Centennial, Galaxy and Cascade, creating wild tropical fruit, pine and citrus notes. Double dry-hopping creates an aroma that jumps right out of the glass.

Need A Miracle

Another special one off collaboration IPA brewed with our good friend Peter Hoey from Brewer’s Supply Group. This one is all about the hard to get hops, hence the miracle. It starts off with a soft bitterness that showcases a blend of Simpsons Best Pale malt and Best Malz Pilsen malt for a nice up front malt hop balance. Hopped and dry hopped with Southern Cross, Nelson, Galaxy and the ever illusive South African Southern Passion for a citrus, gooseberry, lemon peel and passion fruit blast of flavor and aroma. Then for good measure we dry hopped it again with Amarillo and Cascade whole leaf flowers adding some more floral, tropical, and citrus notes.

"Admiral" Stache

Milwaukee Brewing Co’s take on a classic European style. Baltic Porters are the stronger lager fermented cousin of the classic London Porter. The higher strength and cold fermentation help to create a smooth, less fruity porter, rich in roasted malt flavors and aromas. The “Admiral” Stache has a deep brown hue with a light caramel head. Toffee and milk chocolate dominate the flavor with subtle hints of dried fruit. One month of aging in Bourbon Barrels imparted a layer of vanilla and oak. We first developed this beer in 2007. Our first attempted batch of beer at the 2nd street location was a Baltic Porter. What we ended up with became known as “Shake Down Nut Brown”. You can guess what went wrong from there… But, so many things right! Every year that has gone by, the beer has gotten a little bit stronger, in flavor and alcohol. We use a black malt for the dark rich color and an extra special malt for the dried fruit flavors. Baltic Porters are fermented cold with a lager yeast. That long slow maturation creates a smooth flavor profile. The anticipation of the bourbon barrel aging it the most exciting part of this brew process. We want that oak character with hints of bourbon, we use 3rd run barrels for this result. Each batch has been slightly different from the last.
