We ‘withheld’ some of the alcohol and bitterness to create a sessionable Belgian-style wit beer. Wit-held is an unfiltered wheat, brewed with Belgian pilsner and German pale wheat, finished with hops from the Pacific Northwest and Australia. It has a hazy off-white color, smooth mouthfeel, with a delicate balance of sweetness and orange spice. The finish is crisp, semi-dry and refreshing with very mild hop bitterness.

A sure sign of Spring, cherry blossoms on the trees and Cherry Blossom Ale in the glass. This wheat ale is fermented with 588lbs of pureed dark sweet cherries per 20bbl batch.

We love Mosaic hops. Originating from the Pacific Northwest, these American-grown hops explode with aromas of ripe mango, pineapple, and tangerine. We combine this fruit basket of flavor with a brett-forward, foedre-aged blonde ale to create something special. With one foot in the barrel-aged sour world, and the other in the land of IPAs, this style-breaking exploration of flavor is a blast of aroma followed by a complex funky oak finish. Pair with spicy-scallop rolls, mango chicken stir fry, and toasted coconut donuts.

Having never worked with it before, what was it about Calypso that appealed to our brewmaster? Unique notes of apple and pear mixed with stone fruit and citrus. A second date was a no-brainer.

Sugar Shack founder Ian Kelley and Strangeways founder Neil Burton exhibit several parallels when it comes to their respective businesses. Travel around the United States and Europe first fueled their interest in establishing unique, local ventures guided by quality and passion. With a rich dark amber color, this waffley sweet treat is neat! We began with copious amounts of Wheat, Victory Malt, Carabelge, and Belgian candied sugar to set up the malty waffle backbone, then played with an Abbey yeast to bring the taste of waffles and syrup together. Starting at 19.6 Plato, then finishing around 5, many residual sugars still reside as we move the almost finished beer onto over 2000 pounds of blueberries.

This refreshing and expressive wheat beer features notes of light citrus, coriander and tart prange peel.

Welcome back to the Dank Tank Series! This brew features rich and smokey bacon notes, wrapped in a medium-full body and a relatively high ABV.
