Absurdity is a beautiful contradiction. Mad science! We’ve taken our deceptively drinkable Belgian Tripel and crossed it with a bold American IPA. The result is a smooth, refreshing golden beer with big citrusy flavors of tangerine and grapefruit, subtle complexities of clove, bubble gum, and smarties candies, and a drying finish. Less bitter than most IPAs; more refreshing than most Belgians. Absurdly good. Let it warm to taste the full complexity.

In the late 1800s, Vienna brewers made three versions of their amber lagers. The highest alcohol version was called Marzen or Fest Bier. The lowest alcohol version was called Abzug, which means "discount" or "reduction" in German. These beers were the Austrian version of session beers. Our version tips the scales at 3.75% alcohol by volume. It's crisp, refreshing, with a nice floral Saaz hop nose, a malty palate, and a clean finish. This is the beer we brew for the wineries during harvest, but it's available to everyone.

We make beer, so we really have no reason to condemn most things. On the other hand, you are opinionated (we get it), but why be a buzz kill and express disapproval when you can loudly and enthusiastically express approval? Beer drinking is fun, exciting, and often times challenging, so let’s be Pollyannaish about the experience that each new sip provides. This Belgian Golden Strong Ale is brewed with mostly Belgian pilsner malts and a whole bunch of Belgian candi sugar. We then added lots and lots of apricots because apricots are cool and Shakespeare called them an aphrodisiac in “A Midsummer Night’s Dream.” We’re not sure if that’s true or not, but if you look at them a certain way, they do look like a butt.

ACE Apple Honey Cider

With a dry fermented apple base we add Sonoma Wildflower Honey. We finish up with a golden colored cider at 5% alcohol by volume with a slight spritz because of the density of the honey. The cider starts the palate with sweetness and then finishes dry. It is one of our more complex ciders. We bottle it in 12 and 22 oz bottles as well as kegs. The ACE APPLE HONEY is a seasonal cider that is released in February. This cider is somewhat like a mead and delicious with fowl. It is all natural and gluten-free.

The use of lactobacillus in this brew lends an approachable level of puckering sourness, pleasant acidity, and a tart refreshing finish on your tongue.
