Doppelbock has been our winter seasonal since day one and the first Aviator Doppelbck debuted in the winter of 1998. Doppelbocks are noted for their rich, bread-like malt flavors, and this year’s offering has a luscious blend of the best German Munich malts from the Weyermann Specialty Malting Company located in Bamberg, Germany along with some other malts that we choose to keep to ourselves. Aviator Doppelbock is served mit naturtrüb, or “with natural cloud”. Not only does this contribute to its rich palate, but it also makes this one of those stronger beers that holds up well during storage.

This is the first Tighthead beer created by our brewer Adam. He started with a blend of 7 malts, hopped it up with Galaxy and Centennial hops, fermented it dry with our house ale yeast, then aged it in second-use Woodford Reserve bourbon barrels for 5 months. The resulting complex strong ale has a whiskey-like nose with vanilla and caramel notes and a bitter dark chocolate flavor with a dry, warming finish. “THIS IS some AWESOME SAUCE!”
