Brewed in the early winter of 2013, primed and bottled in May, conditioned throughout the summer and Garded ever since! This is perhaps the finest example of Biere de Garde outside the continent. Brewed with Belgian and French malts, French hops and our house yeast this brew is full of malt flavor, with a slight sweetness and wonderful, lively carbonation. Coming up on almost 2 years old this brew is almost perfectly aged.

A balance between malt sweetness, hop bitterness, and yeast produced esters and phenols. A slight hint of clove combines with the earthy hop bitterness, which helps to cut through the bready and malt sweet flavors. There is a pungent malt aroma produced by the aromatic malt that carries this beer forward as refreshing and medium bodied.

Bière De Garde

Name literally means, “Beer which has been kept or lagered.” No expense was spared in recreating this traditional artisanal ale from Northern France. To recreate this regional specialty, we imported all of the ingredients from the countries that birthed the style. The end result is a malt-forward amber with deep hints of caramel and candied apple. Eight different specialty malts come together to yield a magnificently complex malt profile. The French Strisselspalt hops used for aroma create a mildly spicy and floral bouquet. The unique yeast strain combined with warm fermentation and an extended cold-conditioning period produce a smooth and drinkable ale reminiscent of a lager but with full flavored ale fruitiness.

Our Biere de Garde was inspired by the farmhouse beers brewed in Northern France and brewery friend Steve Jones, proprietor and cheesemonger at Cheese Bar. Steve was lamenting the dearth of food-friendly Biere de Gardes and we took that as a cue to develop a beer that would fill the gap. Traditionally, Biere de Garde was brewed in Winter and early Spring while the climate was cooler, then garded (lagered) during the cool months, and reserved for consumption during the summer. This beer offers a soft and clean, malt forward flavor with a reserved hop profile.

A bright Biere de Garde with a pale copper sheen, this beer is brewed with pale malt, and some oats for creaminess. Hopped with Sorachi Ace to reinforce the citrus bite from the bergamot addition, the Brewery Vivant Collaboration is refreshing, and strong. A hint of clove from Vivant’s house yeast brings a spice bite to the extra dry finish.

This lager is brewed in the French farmhouse style. We add our own twist by adding 30% Rye Malt, locally grown Triticale from MA and amber Belgian candy sugar. We leave this beer slightly hazy to accentuate the mild fruity yeasty character. Copper in color, a spicy Rye flavor emerges in a dry yet malty finish after lagering for five weeks near freezing.

The Saison (translated as “season”) is a drier pale ale known for high attenuation and a spicier yeast strain. Dating back to the 1800’s, the Saison originated in Wallonia, a French speaking region of southern Belgium. Traditionally brewed in the winter months, saisons would age until the summer when they were brought out for the farmhouse workers of the time who were allotted to imbibe up to five liters each workday as a way to combat dehydration when local water supplies were unfit for consumption. Slightly dry and with a hint of citrus, our saison’s complexion is subtle but distinctive and has quickly become one of our favorite session beers.
