A decidedly hoppy and bitter, moderately strong India Pale Ale (IPA). The beer emphasizes the hop aroma and flavor white muting the hop bitterness. Loaded with Cascade hops that provide Floral and citrus notes. It’s called India Pale Ale because it was a hoppier, more alcoholic version of the typical ale shipped to British troops in India in the 1800s. Turns out that hops and alcohol are a great preservative.

Glowing like the Iowa Capitol dome in Iowa’s capital city, Des Moines, this golden lager is brewed with time-honored German brewing methods. Its slightly sweet, bready, malty flavor is balanced perfectly by traditional German noble hops with medium-low hop bitterness. Like building the magnificent 23-karat gold leaf Iowa Capitol dome itself, this beer can’t be rushed. We create it with the finest domestic and imported German two-row barley malt and noble German hops as well as traditional lager yeast. This delicate beauty undergoes a lagering period of three to four weeks after initial fermentation to bring out the best this beer has to offer. The result is a beer which, much like Iowa, has something for everyone — satisfying to the experienced craft beer drinker, yet welcoming to those new to the world of craft beer.

A German style ale originally brewed in the Northern German City of Cologne. 10% wheat malt, the finest German hops, and our pure yeast strain ensures a truly authentic beer characterized by a mild sweetness rounded out by restrained hop dryness.

Capitol Pale Ale is a medium-bodied, deep gold beer and a great example of a true American pale ale. Light, malty flavors combine with aromatic hops for a beer that is quenching and easy to drink.

Made with classic Pacific Northwest Cascade, Centennial, Mt. Hood in the boil and dry hopped with more Cascade hops. Cascade aroma dominates the nose, so be sure to sniff it like a wine snob. Plenty of ultra premium Maris Otter malt and three specialty malts give the beer a nice smooth sailing biscuit like aroma and body, some sweetness, well balanced against 5.8% alcohol by volume.

The Captain’s Pale Ale is a medium bodied American pale ale. We used four varieties of hops from the Pacific Northwest region to give this beer a strong, spicy bitterness with a smooth finish. Hints of grapefruit from the hops lend a little sweetness to the taste, which is also complimented by a grassy nose. This beer has quite a strong flavor at first, but once you start drinking it, it’s hard to stop.

This mutt of a beer is truly unique, just like its name's origin. Cara de Luna comes from a childhood nickname that founder Marisa's dad came up with to describe her incredibly round and full face. The phrase is Spanish for "Face of the Moon." We take German hops, Belgian Malt, and American yeast to make this Black German style Pale Ale. A light mouthfeel lends itself to the soft maltiness and distinct smooth hop character. Leaving convention behind, this beer paves its own path.

When you are seeking a light bodied but flavorful lager, look no further! We have the answer with a bright, filtered, brilliant golden Pilsner style beer. This special Pilsner has a European flavor profile which promises a slightly stronger taste, but a crisp, clean maltiness. A balanced Pilsner for all beer drinkers to enjoy.

Cream Ale is unique in the fact that it derives from North America not Europe, as it was spawned from a thirst for something more than regular American lager beer. Generally brewed with an ale yeast and cold conditioned like a lager, a Cream Ale will usually have a golden color with light to medium body, but the Cariboo Cream Ale reflects the winters of the North – a bit more colour, body and flavor to really keep you cozy when it is minus twenty. Our Cariboo Cream Ale is brewed with an authentic ale yeast that we have specially selected to give our beer a distinct creamy note to enhance the robust aroma malts, we also add a hint of vanilla. The beer is darker than a typical Cream Ale because we use specialty roasted malts that add more flavor. You can enjoy all year round with spicy Asian foods or pork dishes.

Well Balanced Lager: Slightly malty with some residual sweetness and a crisp, clean finish Our Cariboo Honey Lager is first and foremost a beer that will please the typical beer drinker. Second, it contributes additional resources to our Reforestation Program that is fighting pine beetles and forest fires harder and harder by the day. The beer itself is made with the same raw ingredients as our classic recipe but we add real BC honey from the Cariboo region to the brew. With the success of our Genuine Draft the Honey Lager is an excellent addition to the family and the beer itself is a crowd pleaser! The Cariboo Honey Lager has a hint of honey that gives the beer a nice body and it will leave with you with a pleasantly warm and smooth finish that has little residual sweetness and goes very well with the Cariboo Brewing philosophy. We did not want to create a beer that was too sweet or that had an overbearing honey flavor. Great with spicy food or roast chicken.

Since the beginning, the most important ingredient in a good Pale Ale is the water. Brewed with our 100% pure BC spring water and a generous portion of Cascade Mountain Hops, this Pale Ale is quickly becoming the heart of our summer operation. With a refreshing, full flavored taste that is smooth and satisfying, Cariboo Pale Ale is the kind of beer that brings the familiar into focus, making the important things easier to notice. It’s where the Summer goes to get a lil cooler and you should too. Medium body with a bouquet of hop and sweet malt aromas. The overall character is greatly influenced by the top fermenting Ale yeast that gives the beer some nice fruity ester characteristics. We balance our Cariboo Pale Ale with a dash full of sweet caramel malts and it goes well with BBQ or grilled meat.

A medium bodied American Brown Ale. It has a toasty character with hints of chocolate and alcohol. Earthy and slightly spicy hop flavors balance the dark malt flavors.

Carmelite Wheat is a beer brewed in the traditional German style of a Hefeweizen. Hints of clove spices, banana and vanilla come mainly from the yeast while the malty sweetness is subdued with high carbonation and low hop bitterness. The specific yeast strain used to ferment this beer comes from the yeast banks of the oldest brewery in the world and has been cultivated since the 11th century. What the heck is a Hefeweizen, anyways? Glad you asked… “Hefe” means yeast, “Weizen” means wheat. So a Hefeweizen is a wheat beer brewed with the porpose of retaining some yeast. It is a top fermented, unfiltered, wheat beer with a noticeable yeast sediment and a cloudy appearance. Wheat beers are also referred to as Weissbiers (white beers) because before the invention of pale lagers and pale ales, most beers were dark. Wheat beers were the exception as the wheat content lightened the colour of the beer.

A lighter ale brewed with very select pale malts and mildly flavored with a blend of special hops. This beer is exceptionally smooth, crisp and very drinkable with a rich gold color.

A medium bodied, dark brown ale with a complex chocolatey, toasted malt taste. It has a dry finish that makes it distinct from some of the sweeter brown ales. We use five different types of malted barley to give the beer its color and variety of malt flavors.
