Totally sessionable, this bright, hop-forward Pilsener was first introduced in 1989 right here in Chicago. In a time when “craft beer” did not yet exist in Chicago and pure, flavorful beer was virtually unknown in the US aside from imports —and people thought “Reinheitsghebot” was something you said when someone sneezed— this beer caused quite a stir. Today, we’ve painstakingly recreated Douglas Babcook’s original, ground-breaking recipe, right down to the exact hops and exclusive yeast strain. Its amber color, spicy hop-forward aroma, malty body, and creamy finish truly set this beer apart from all others. The late beer critic Michael Jackson called this recipe, “The best pilsener I’ve ever tasted in America.” We humbly agree. This beer, named for the legendary Cherokee Indian Chief, includes lemongrass, lime leaf tea, and the exotic hop trio of Mosaic, Apollo and Calypso. The beer has a decidedly citrusy, grapefruit-like flavor.

This delightful Pale is combined with 5 different chili peppers to give it its huge pepper nose and flavor. Pablano, Anaheim, Jalapeno, Serrano and Habanero peppers are hand-roasted with the seeds removed to give you all of the pepper flavor with just a hint of heat in the background.

After a couple of years in operation, making our two flagship ales, we started to hear: “Brewery guys, these ales are tasty, but when are you going to give us a good old lager beer at a good old lager price?!” In May 2000, we caved in to peer pressure and created our own chemical-free alternative to the big brand lagers. We said it was “Crisp and clean, pure and natural” – everything you want in a lager. Light and effervescent, without that nasty chemical tang, Chilkoot Lager goes down pretty smooth and easy. As one of our best selling beers, Chilkoot lives up to what we hoped it would be, a perfect alternative to mainstream beers and the best place to start trying craft beer. The name Chilkoot harkens back to the Gold Rush days when stampeders hiked the world famous Chilkoot Trail from Skagway, Alaska and down into the Yukon eventually hitting the lakes and rivers that become the Yukon River. This was by far the most travelled route to the Klondike gold fields of Dawson City – the territory owes its existence in part to the historic gold claim and it was a logical name for our first lager.

The lightest flavour profile of our brews but no less consummate. Choice American Tettnang and Cascade hops combine to evenly blend and balance the light Irish lager malts.

Named Cinq Cents in 75 cl (25.4 fl.oz.) bottles, this beer with its typical golden color, its slightly hazy appearance and its fine head is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavor, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, re-fermented in the bottle, is not pasteurized.

This is a beer whose fragrance of fresh yeast with a light, flowery rosy touch is especially pleasant. Its flavor, noticed when tasting it, only accentuates the pleasant sensations perceived in the aroma , while revealing a light but pleasant touch of roasted malt. This top fermented Trappist beer , re-fermented in the bottle, is not pasteurized.

This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier. “To all those who still hold dreams and will never cease to search for the happiness they deserve”. Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink. “It is like following an illusion we fell in love with a long time ago leaving us with the realization that when we pursue our dreams the immortality of spirit is found”.

#1 It is fundamental to the spirit of Chindogu that inventions claiming Chindogu status must be, from a practical point of view, (almost) completely useless.

We hit this full bodied IPA with “nookie” four times during the brewing process to give this ale its trademark Chinook hop character. We then “dry nookied” this flavorful ale to further enhance its grapefruit and pine aroma.

A smoked Scottish style ale with a very rich malt flavor and a nice smoky finish. We also take this beer to the next step by aging it on French oak soaked in a fine Scotch.

Roasted chipotle peppers produce an eye opening chile flavor in this deep golden ale with a malty, smoky aroma and smooth, crisp flavor. Dedicated to Spanish author Juan de la Cueva, who, in 1575, wrote of a Mexican dish that combined seedless chipotles with beer: Chipotle Ale is based on Rogue’s American Amber Ale, but delicately spiced with smoked chipotle chile peppers. Blend it with Rogue Chocolate Stout and create a Mole black and tan!

London-style brown porter. The forefront of this beer is malt with a delicate, distinct dark chocolate overlapping a subtle toffee character.

Chocolate Hazelnut Porter, or CHP as we call it, is a dessert in a glass. It is a rich, robust porter bursting with luscious chocolate and hazelnut. Notes of coffee and caramel round out this delicious treat.

Dark malts accompanied by chocolate and crystal malts, cold conditioned with a chocolate macadamia nut infusion.

Brewed with nothing but the highest quality English ingredients, including floor-malted Maris Otter, Oat Malt, and two types of Chocolate Malt, this Chocolate Oatmeal Porter is sure to please. The end result is a malty, full bodied oatmeal porter.

"The George Washington"All too often you try a porter and it’s either too sweet or too bitter. Not at SOL!! Our George Washington is lightly hopped to bring out the malty chocolate flavors of the dark grains in this exceptionally smooth dark ale. This beer is an easy drinking version of the Robust Porter style. Enjoy!

Our chocolate stout is a full bodied, intense stout, which uses organic chocolate extract to turn this delicious dark brew into a liquid alcohol candy bar. Yum. For the big boys and girls.

Ebony in color with a rich creamy head. The mellow flavor of oats, chocolate malts and real chocolate are balanced perfectly with the right amount of hops for a bitter-sweet finish. The recipe for Rogue Chocolate Stout was created several years ago for export to Japan. The exported twelve ounce Chocolate Bear Beer bottle label is in Kanji and features a teddy bear with a pink heart on his belly. Chocolate Stout was released for Valentine’s Day in 2001 in a twenty-two ounce bottle for the US market. The label features a Roguester (Sebbie Buhler) on the label.

Shannon Chocolate Stout is exactly what the name suggests—a rich, subtly sweet, lightly hopped milk stout — satisfying and perfectly balanced. Our chocolate stout is brewed to have a deeper, almost black hue that surprises the drinker with its wonderful chocolate aroma, a slightly sweet first taste and a complex rewarding finish. Our fire-brewed process delicately caramelizes the sugars in the dark wort and accentuates the malty flavors in the roasted barley and chocolate malts. The addition of raw cocoa nibs during fermentation impart subtle chocolaty aromas that make this stout a year-round treat.

Fine to medium carbonation forms an ample, buff colored head, showing caramel tones, toasted sesame and warm grain. Sandi’s signature: Chocolate malt, Northern Brewers hops, South Dakota chokecherries and our well water.

A hoppy Northwest style red ale. Lots of late addition Cascade hops give this malty red ale a floral and spicy aroma. Finishes with a subtle malty sweetness.
