After a couple of years in operation, making our two flagship ales, we started to hear: “Brewery guys, these ales are tasty, but when are you going to give us a good old lager beer at a good old lager price?!” In May 2000, we caved in to peer pressure and created our own chemical-free alternative to the big brand lagers. We said it was “Crisp and clean, pure and natural” – everything you want in a lager. Light and effervescent, without that nasty chemical tang, Chilkoot Lager goes down pretty smooth and easy. As one of our best selling beers, Chilkoot lives up to what we hoped it would be, a perfect alternative to mainstream beers and the best place to start trying craft beer. The name Chilkoot harkens back to the Gold Rush days when stampeders hiked the world famous Chilkoot Trail from Skagway, Alaska and down into the Yukon eventually hitting the lakes and rivers that become the Yukon River. This was by far the most travelled route to the Klondike gold fields of Dawson City – the territory owes its existence in part to the historic gold claim and it was a logical name for our first lager.

Chimay Cinq Cents (White)

Named Cinq Cents in 75 cl (25.4 fl.oz.) bottles, this beer with its typical golden color, its slightly hazy appearance and its fine head is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast. The beer's flavor, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, re-fermented in the bottle, is not pasteurized.

Chimay Dorée (Gold)

Brewed from very similar ingredients as the Red, but paler and spiced differently. It is a patersbier, intended only to be drunk at the abbey or at the nearby inn Auberge de Poteaupré, which is associated with the abbey. The monks themselves drink this variety rather than the stronger three. The Dorée is not sold commercially and the rare bottles which make their way out are through unofficial sources. Even the brewery's own web site makes no mention of this variety.

The Chimay Première is the oldest of the Chimays. Its coppery color and sweet, fruity taste make it a particularly tasty dark ale. Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. The taste perceived in the mouth is a balance confirming the fruity nuances noticed in the fragrance. Its taste, which imparts a silky sensation to the tongue, is made refreshing by a light touch of bitterness. To the palate, the taster perceives a pleasant astringency which complements the flavour qualities of this beer very harmoniously. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Chimera

This is a top fermented beer which undergoes a secondary fermentation in bottle. It draws inspiration from the great Belgian Abbey beers. With the color of a friar’s robe, it has aromas of caramel and alcohol preserved fruit (pear, plum and morel) with light roasts. The mouth is warm and complex with an unexpected dry finish that makes drinking easier. “To all those who still hold dreams and will never cease to search for the happiness they deserve”. Perfecting this beer was certainly challenging. Countless variations were jettisoned before arriving at the refined version we are proud to brew today. The current Chimera is most easily compared to a Belgian Dark Strong Ale. I travelled frequently in Belgium as a young man and I always enjoyed very much its beers. Today’s Chimera resembles those beers that awakened a lifelong fascination with the creation of this wonderful drink. “It is like following an illusion we fell in love with a long time ago leaving us with the realization that when we pursue our dreams the immortality of spirit is found”.

Rich and decadent. This strong porter is perfect for sipping at the end of the day or to accompany full-flavored foods. The intense, roasty flavor comes from two types of chocolate malt and raw cocoa nibs. Whole vanilla beans introduced post fermentation add complexity and enhance the dessert-like qualities of this full bodied beer. This beer began life as our Panamanian Porter with the flavors of chocolate, vanilla and banana. A truly unique beer, we felt that all those flavors needed some smoothing out so we changed yeast strains and eliminated the banana flavor (Which came from the yeast strain). The Panamanian Porter did have many fans however, and there may be plans in the future to bring it back for a special occasion. Stay tuned!

The climb was a vehicle to raise money and awareness about lung cancer. The people of Tibet call Mt. Everest “Chomolungma” this exceptional ale is 85% organic and carries on the spirit of the climb. 9 Malts, 2 hops, and twenty pounds of wild flower honey give this ale an exceptional character.
