The name CascaZilla (Cas-kuh-zil-uh) is a play on both the name of a gorge in Ithaca called Cascadilla and the monster amounts of Cascade Hops we use to make the beer. The predominant flavor and aroma of this beer comes from fresh American hops. CascaZilla gets its distinctive red color from a healthy portion of caramel malt, which also lends to the beer, a hearty body and sweetness. It is a hoppy red ale!

This classic ale is made using nothing but malt and fermented at a lower temperature to give it its clean finish. Easy to drink, low in alcohol. This is a terrific cross-over beer for those who enjoy American style ales.

Exuberant, effervescent, sweet Cassissona, the beer with a punch, has a rich, complex fruity aroma - primarily black currant - besides other innovative and intense flavors and scents. It was designed for several very special situations, and is best when served with fruit desserts or - another valid alternative - savory cheeses. A certain "winy" flavor makes it perfect for "Cantucci" cookies from Siena, for instance. Its sweetness and strength impart a certain languidness and mellowness to mind and soul. It is suitable for unflappable folks or appropriate as a specific remedy for people suffering from hyper-efficiency. After Cassissona®, there is the void: an astronomical number of tiny bubbles carry - at the velocity of the expanding gas - fragrant molecules (esters and superior alcohol) and massive doses of ethyl alcohol to the few agitated and awed neurons in the brain. There is no time for questions, nor is it a time for answers, so just sit back, get comfy and enjoy a mouthful of life. I indubitably placed it on the 7th level of the B.I. Scale, and with the same certainty, I called it: "Rien va plus!"

This time of year, there is no more coveted hop than the Galaxy from Australia, which was originally populated by England's outcast convicts. Outcast IPA employs these hops generously from hop back to dry hopping stages. Yet the result is a balanced and bronzy ale, with medium hop bitterness complimented by moderate maltiness, showcasing aromas and flavors reminiscent of passion fruit. Released on the heels of Nothwest-hopped Insider IPA, Outcast is a secret handshake between hemispheres.

Our Catch 23 is an excessively hopped ale brewed with Rye and Roasted malts. The use of rye gives this beer a luscious pillowy mouthfeel to support the aggressive citrusy, piney hop profile. Rounding out the beer, the use of roasted malts gives Catch 23 its dark color and adds a significant complexity to the malt character.

A golden colored medium body “Imperialistic” IPA that starts off with a massive grapefruit nose and continues with smooth malt backbone and a big punch of citrus and grapefruit zest.

Big and friendly, our Brown Ale is as approachable as its inspiration—Cedric, George Vanderbilt’s beloved St. Bernard. Our deep russet-colored beer offers hints of caramel and roasted barley, with a nutty flavor produced by Victory ™ malt. The crisp finish is marked by well-balanced hops.

On the occasion of our 5-year anniversary in 2010, we have committed a new beer. This is a golden beer of 6.5%, brewed with lager malt, münchenermalt, caramel malt and wheat malt, seasoned with moss, Fuggles, Goldings and Cascade hops in abundance. It is our currently most lightly hopped beers, but far from a "hop bomb". Humlerne combine to create a velvety, pleasant bitterness, even when the beer enters the mouth. Afterwards comes a balanced flavors of hops and darker malts. This beer we find is suitable for heavily spiced meat dishes. Find yourself an opportunity to celebrate and enjoy a glass of Celebration at approximately 8 degrees Celsius!

A beer that has a dominant malty taste. This beer’s origins in a monk’s recipe are reflected in its heartiness. The Pope of Beers, Conrad Seidl, describes it as: “Almost black with a very slight red tone, a sensational, festive foam and truly extraordinary fragrance that at first summons up visions of greaves lard. The first taste is of mild fullness with an accompanying coffee tone, which becomes more dominant with the aftertaste. There is very little of the sweetness that is frequently to be tasted with doppelbock beer.” The Ayinger Celebrator has been ranked among the best beers of the world by the Chicago Testing Institute several times and has won numerous platinum medallions..

Celia Saison is inspired by the rustic farmhouse ales of Belgium. The spicy flavor of the sorghum is complimented by the unique flavors of our Belgian yeast strain as well as the additions of Curacao orange peels and Celeia hops. A classic American-style IPA is good any time of the year, and thats why we are happy to bring you our Cellarman’s Reserve Single Hop IPA Series with year-round availability. In order to highlight the hops, the base of the beer is a simple recipe comprised only of 2-row and Munich malts. A 7% abv gives us just the right amount of balance for 65 IBUs of hoppy goodness coming from using only one single hop varietal for bittering, flavor, and dry-hopping additions. Next comes the Martin House twist. While its availability is year-round, the hops we use will not be. From time to time, whenever our Cellarmen feel like it, we’ll switch out that single hop. While the beer overall will remain the same, the drinker will get to experience the nuances of each hop varietal.

There ís nothing traditional about this traditional Indian Pale Ale. Amber in color with an INTENSE maltiness perfectly balanced with a spicy hop flavor. Carefully dry hopped at the end of its fermentation cycle with Centennial Hops. The ALE that cures all that ALES you!!!

A classic Northwest IPA brewed with crystal malts that give it a rich golden color. Centennial hops provide a floral nose and sharp bitter finish.

A very full bodied, citrus and malty Imperial Double IPA that contains 120 lbs. of clover honey from Hunber's Honey Farm in Martinsville Indiana. It is dry hopped with Galaxy and Cascade hops.
