Brewer's Heritage

A German style of wheat beer, with a yeast that produces a unique phenolic flavors of banana and cloves with an often dry and tart edge, some spiciness, bubblegum or notes of apples. Little hop bitterness, and a moderate level of alcohol. The "Hefe" prefix means "with yeast", hence the beers unfiltered and cloudy appearance. Poured into a traditional Weizen glass, the Hefeweizen can be one sexy looking beer.

Brewer's Reserve Bourbon Barrel Belgian Quadruple Ale

Brewed with well water, locally malted barley from Blacklands Malt, raw Texas wheat, hops, and lime salt. We fermented it in stainless steel with our mixed culture of brewers yeast, native yeast, and native bacteria. We then blended it with Montmorency vs. Balaton, our barrel aged sour beer refermented with cherries at a ratio of about twelve to one (farmhouse ale to MvB).

Brewers Reserve - Double India Pale Ale

Holy hopheads! Prepare for a citrus explosion on the nose and the palate with a small helping of dank. This IPA is big and in your face, but in a pleasant sort of way. There's a really nice malt balance to this beer, but the beginning, middle and end is unmistakingly hops and more hops. With a nice, drinkable body, the ABV will sneak up on you fast...so, careful folks. Proceed with caution, and lots of excitement.

You asked, we listened...With this, our 10th edition of Brewers’ Cut, RABC unleashes one of the most requested styles we had yet to brew. Our Double IPA dons a helm of copper color that masks the forces contained within. Commanded by a heroic legion of hop flavors and aromas, and supported by a striking bitterness, any hop loyalist would gladly head into battle with such a formidable ally.

A "hybrid" style, California Common or "Steam" beer is a lager beer fermented at warmer ale temperatures. This style originated on the West coast at the turn of the 20th century when breweries were unable to cool and ferment their lagers in the ordinary lager temperature range. Our "steam" beer is medium-bodied, dry, and refreshing characterized by toffee notes balanced by a subtle citrus hop character.

Fruits have long been incorporated in the brewing of beer, particularly in Belgium. The brewing traditions of this stylistically prolific nation are the inspiration for Brewers’ Cut Kriek, a Belgian-style Brown Ale of subtle caramel and dark malt character aged with tart cherries from the Willamette Valley. The beer finishes clean and dry, with a hint of cherry pie enticing you back for more.

Brewers' Cut No. 19

In the spirit of friendly neighborhood smack-downs we present the Belgian-Style Pale Ale, Belgium’s response to the European Pilsners that dominated much of the mid-twentieth century. Unlike the hop-driven profile of American pale ales, Belgian versions lean more heavily on malt and spicy yeast flavors, with a subtle noble hop character playing in the background. Our version of the style features the German-bred Mandarina Bavaria hop, a daughter of the American variety, Cascade. With its German-American heritage, Mandarina employs a subtle orange character to weave between the sweet spiciness of our house Belgian yeast strain.

An homage to Belgian brewing tradition, with a slight departure. Characteristic of the style are notes of caramel, candi sugar, and dark fruit. Our addition of premium Belgian Black Malt adds a subtle component of dry roastiness for a deliciously dark complexity.

Brewers' Cut No. 24 Session IPA

All the hops you want, in a package you can repeat. Session IPA as a style has a shorter history than most. As a counterpoint to the traditional American IPA, this style came about to allow the hop enthusiasts of the world a vehicle for obtaining the bitterness, flavor and aroma they so desired, without all the booze that would either cut their night short, or ruin their next morning. For our Session IPA we selected a new (to us) base malt, English Golden Promise, to add unique malt character, without the sweetness of caramel malts that are often used in IPA. The star of the hop lineup is the new variety Eureka!, which brings bright notes of peach and tropical citrus to balance the clean bitterness.

This marriage of Amarillo hops to our favorite Porter recipe was initially devised on a very small scale, a mere 10.7 gallons to be exact. For this version we’ve tweaked our usual hop additions to build harmony between the smooth, caramel roast of the Porter and the floral and citrus character that comes from a substantial dry-hop addition.

In the local vernacular of Dusseldorf, sticke means “secret,” a nod to the experimental recipes employed by the brewers of this obscure variation on the Altbier. While the recipe for our Sticke Alt is also a secret, we can tell you that it honors the spirit of this special German style ale with its elevated noble hop profile, more pronounced bitterness, and firm malt character.

As the seasons change in Bavaria, a similar transition takes place in the bold Bocks of its celebrated beer gardens. While the winter chill gives way to spring, so too does the hearty bockbier, shedding some of its dark malt layers to reveal the pale Maibock. It retains all the heft of its wintery predecessor, yet offers a refreshing hoppy reminder of the summer to come.

Brewers' Reserve - Tart Cherry Berliner Weisse

The creation of our lab technician and QA/QC scientist, we used a process called kettle souring with a pure bacteria culture to create very clean and pleasantly tart beer. A traditional Berliner Weisse beer would weigh in right around 3% ABV. So for the style, this is a big beer. The addition of real cherry puree gives this beer a nice fruity finish for balance. This is good livin' right here folks.

Brewer’s Breakfast

Brewed with maple syrup and dried fenugreek seeds, this porter pours with a beautiful lacy and frothy head that carries maple and pecan aromas. When you bring it to your lips a soft sweet hint of maple and the roasted chocolate tones fill the pallet. As the flavor develops you swallow and are left with the slight roast of the chocolate malt and that sweet exhale of maple. Before you pick up the glass for another sip you lick your lips and enjoy another subtle hit of maple. The medium body helps to give you a bit of what you want in a porter and yet light enough to be able to enjoy a few pints. 2013 Bronze Medal Carolina Championship of Beer
