Bravo is the very first beer that we brewed for the barrel aging program and is a beer that we have brewed every year since. We originally named it after an experimental variety of hops that we were interested in trying. We now brew the beer with US grown Fuggles which are earthy and resinous. It is a lean simple barley wine brewed to show case barrel flavors. This batch has massive bourbon barrel notes that morph as the beer warms in the glass. Draft only, extremely limited.

As for Bravo, according to Head Brewer, Chris Wilson, the base of the beer comes from pale, wheat, and crystal malts and features some roasted barley while Pilgrim and Hallertauer make up the light hop profile.

Burnished gold in color, light to medium in body with an intense hop character that comes exclusively from kettle and dry hopping with Bravo hops.

Dry Hopped Pale Ale Layers of US hops are set against a backbone of British malts, so what this beer lacks in strength, it makes up for in character. Look out for fresh flavours and aromas of pine, peach, lychee & citrus fruits, tempered by a smoothly rounded bitterness to leave you wanting more.

Brown sugar imperial stout aged in bourbon barrels.

A hopped up American pale ale (APA) with a generous dose of Pacific Northwest hops. Brewed with American 2-row malt and a touch of light caramel malt, this APA is dry hopped with Columbus, Centennial, and Cascade hops for a burst of fresh aromatics that greets every sip.

Belgian-style brown brewed with Bittermilk Bourbon Barrel Aged Old Fashioned Mix, Oak Staves & Muscavado Sugar.

This is our take on a traditional Irish stout. Being in Wisconsin, we choose to use the wonderful grains malted right here in this state for our rendition. The roasted and malted barleys are painstakingly selected to create just the right balance of roasted coffee and rich chocolate flavors. We add rolled oats for a touch of bready sweetness and the finished product is a balanced black beer that you can drink all day and still want one the next morning (or two…).

The base beer is Undead Party Crasher (an imperial stout), aged in 16 rye barrels with Barrington Coffee Roasting Company espresso beans. After barreling, the brewery blended Breakfast Exorcism with 7 gallons of concentrated cold brew coffee.

Breakfast Stout is a milk stout (we put lactose in the boil) in which we put locally roasted Guatemalan and Costa Rican coffees. The coffee is roasted at Rocky Mountain Coffee Roasters on Main Street.The beer is full bodies and has a milky and caramel sweetness followed by a mild roast from roasted barley and the coffee.

An Oatmeal coffee stout brewed with roasted chocolate barley malts, golden oats and nearly 40 lbs of Ryan Bros Coffee per batch, Breakfast Stout imparts a deep expresso aroma that will arouse and excite. Coffee lovers rejoice! Finally, a happy hour beverage that doesn’t put you to sleep!

We brewed this Breakfast Stout with unsweetened baking chocolate, Sumatran coffee beans, and oatmeal. The roastiness of the malt combines with the coffee and chocolate, giving off lots of deep, roasty flavors as well as a bitterness from the coffee.

Our 2nd generation of Kolsch, which now uses the lightest German Koln and Heidelberg malts available. Just enough hops for balance and brew water adjusted to match Koln, resulting in a very light crisp beer. Critique from some of our friends/neighbors from Koln said that the Kolquittsch Kolsch tasted too much like a Pilsner. So, we have replaced the Pilsner with Heidelberg malt and have made the beer lighter in body and ABV. Heidelberg made us think Heisenberg, who kind of looks like Brewmaster Bob. So, it is now the Breaking Bob Kolsch!

This intensely hopped American IPA carries just enough body to balance a serious hop flavor and bitterness. The aroma of pine and citrus delivers the signature beauty of this style.

Breaking Trail Pale Ale is Park City Brewery’s suitable reward following the difficult but equally rewarding task of breaking trail to your favorite secret stash… It’s red to copper in color, and possesses a medium sweet malt backbone, rich with caramel, biscuit, slightly toasty aroma and flavor. Balanced with medium hop bitterness and floral hop aroma with a hint of earthy and citrusy hop flavor, Breaking Trail makes for a crisp, smooth, easy drinking pale ale.
