Community Pale Ale

American craft beer has become known worldwide for being innovative, unique and above all: hoppy! This deep golden, hop-forward American Style Strong Pale Ale brings loads of unique American hop character and as with most things American, some international influences. We blend four different hops from three different countries to achieve the harmonious balance of citrus and tropical fruit. The clean bitterness is balanced by the sparing use of crystal malts and a blend of base malts including a portion of Maris Otter English malt and American red wheat. Our house ale yeast contributes mild fruity esters and leaves the fermented beer nearly crystal clear, only for us to come along and throw in a bunch of dry hops, leaving a permanent “hop haze.” We think it’s a beautiful thing!

Community Witbier

The mostly-extinct farmhouse breweries of Belgium were notorious for using whatever ingredients were available to them. One of the treasures made by these breweries and nearly lost to history was spiced witbier (white beer). Witbier defied an untimely fate, being revived by a man named Pierre Celis who worked in one of the last breweries in Belgium to commercially produce a version of this unique, spiced beer. Celis eventually sold his own witbier brewery and moved to Austin, Texas to open another white beer brewery (Celis White) and the rest is history. In honor of the late and great Pierre Celis, we are proud to offer Community Wit as a warm weather libation, produced locally for our fellow Texans once again. We brew it traditionally using unmalted wheat as our base and lightly spice the kettle with freshly ground sweet and bitter orange peel and coriander seed. The hops are minimal, keeping the focus on the wheat, spices and the unique character contributed by authentic Belgian yeast strains, one of which originated from the same strain that Pierre brought across the Atlantic to America.

Conundrum Red Ale

Have you ever heard of an ESB? In most cases, it stands for Extra Special Bitter, and man is this red extra special. Conundrum walks the line between a malt-centric sweet ale and a hop-centric bitter ale so well, it’s tough to describe. Quite the conundrum indeed! Think if it in simplest terms: it has a sweet malty profile like the Brown Bear Ale at first, though mostly caramelly instead of chocolaty, but then the taste sensation in your mouth changes to the floral bitterness of our secret hop recipe. If you love the Independence Pass Ale, but sometimes just want something a little ‘mellower’, something with a little more malt profile, this beer may be what you’re looking for. If you like our Brown Bear but are thirsty for something with a bit more snap, give it a try! So far, everyone’s loving the stuff!

Convergence is our interpretation of the classic Belgian Saison style. It is brewed with a huge amount of rye malt, which adds another dimension to the spicy character imparted by the yeast we use. According to legend, thirsty miners in the late 1800s threw celebratory banquets with Coors as the honorary beer because of its superior craftsmanship. Prior to its nationwide distribution in 1981, Coors built a cult following, with presidents, movie stars and many others making special trips out west to buy it. Cooter Brown

Cooter Brown was a family man who lived on the mason-dixon line during the civil war. He decided to stay inebriated for the entire war so that he would not need to pick a side. We salute his peaceful manner by naming our brew in his honor. Jekyll Brewing’s Cooter Brown is an American Brown Ale that is smoother than silk. As you bring our Cooter Brown to your lips, you will smell deep roasty caramel notes as our creamy head embraces your stache. Once you taste Cooter Brown, you will experience a deep chocolate maltiness and an American hop bitterness balanced to perfection.

Copperhead Pale Ale

The Pale Ale with bite. While walking through a field and enjoying a lazy summer evening, our head brewer Steve stepped on a stick that popped up and nicked his leg. Or so he thought, until he found two puncture marks on his ankle. The copperhead bite may have caused a trip to the hospital for Steve, but it also provided just the inspiration he and Chuck needed to name their new beer – yep, one lowly snake in the grass is the namesake of one of our most popular beers.

Corduroy Rye

A bright hoppy American India Pale Ale (IPA) with smooth bitterness, citrusy hop flavor and aroma, and a spicy Rye malt profile. Corduroy Rye is a citrusy, moderately bitter IPA with spicy overtones from the Rye malt. The beginning taste of the beer emphasizes the floral hop flavor from lots of late hop additions and dry hopping. As the beer moves through the mouth the hop bitterness starts to become more prominent and offsets the malty and floral sweetness. The spicy contributions of the Rye occur here too and compliment the floral sweetness of the hops. Towards the back of the mouth the bitterness dominates leaving a sticky bitter taste behind that is one of the defining characteristics of IPAs. The beer is not bitter to the degree of some IPAs however. The high alcohol content is very well hidden as the beer is incredibly smooth and light. This beer does not shy away from citrusy hop flavor. Comparable beers include Jai Alai IPA from Cigar City brewing and, to some degree, Two Hearted Ale from Bell's though both have a more malty profile and lack the Rye spiciness.

Brewed to be thirst quenching with a more moderate alcohol content than our other brews, it is an excellent quaff to enjoy out on the lake on a hot afternoon. Less filling and lower in alcohol, it is intended to appeal to experienced ale drinkers looking for a sessionable brew, as well as serve as a ‘gateway’ craft ale for drinkers who are curious about craft beers, but may find the taste and alcohol levels of most craft brewed ales over-powering.
