Chicken Killer Barley Wine is the revolutionary beer that will someday define America's unique Barley Wine style. It is brewed with twice the ingredients of the Santa Fe Brewing Company's other beers, and only half the usual amount of liquid is extracted from these ingredients. This makes one substantial beer. At over ten percent alcohol, Chicken Killer is actually as substantial as wine, but this is not to say that it is difficult to drink. On the contrary; be careful with this one. The flavors of the beer are at first as overwhelming as the intense Santa Fe sun. Chickity China The Chinese Chicken is our wet-hopped IPA brewed with fresh Citra and Mosaic hops from the Pacific Northwest. This beer is dripping with dank juicy hop goodness, but remains balanced by a firm malt backbone that's enhanced by a hefty addition of malted oats. This one-of-a-kind, once-a-year brew offers notes of guava, mango, honeydew melon and lemon, with a full-bodied mouthfeel and a long, explosive hoppy finish.

3 Floyds has a reputation as the Midwestern kings of alpha (hops), and it seems that one of our beers helped to lure them down the lupulin-paved path. Chico King is a mash-up of our mutual passion for hoppy pale ales and combines a uniquely robust malt body with intense citrusy and fruity new school hop varietals. 3 Floyds marches to the beat of their own (double kick) drum when it comes to collaboration, often partnering with comic book artists, tattoo parlors or heavy metal bands when inspiration strikes. These eclectic beers are coveted throughout the Midwest and some beers, like the legendary Dark Lord Imperial Stout, have spawned something akin to a beer-themed holiday in the brewery’s hometown of Muenster, IN.

A dark beer made with a touch of roasted chicory, organic Mexican coffee, St. John's Wort, and licorice root. Brewed with whole-leaf Cascade and Fuggles hops, the grains include pale, roasted & oatmeal. Chicory is one of the first beers we started brewing when the brewpub opened back in 1995. That's back when we had a teeny, tiny brewing system and had to brew all day, every day to keep up the bar stocked. Brewing with the same four ingredients got real boring, real fast. That's when Sam's ADD kicked in and he started adding some non-traditional brewing ingredeints.

This New England Style Double IPA was double dry hopped with Mosaic Hops. The hazy straw color IPA has tropical aroma and flavor and is refreshing with a slight bitterness. "...honorably East Coast."

Aggressively dry hopped with Citra, Nelson Sauvin and Pacific Jade to give this beer plenty of hop aroma without added bitterness.

A light, crisp Mexican-style lager with over 33 lbs of fresh roasted green chilies. Jalapeno, poblano, anaheim, habenero and even some sweet-n-spicy Fresno chilies. The chilies this season were on the mild side, so while it smells of spicy green chili, the flavor is actually quite mild and very drinkable. A perfect pairing for the DAM nachos!

The original India Pale Ales were brewed for export with lots of hops and high gravity to help them survive long journeys by sea. Chilkoot Trail follows suit using Amarillo and Cascade hops for a floral and citrus flavor. An assertive bitterness and soft alcohol warmth are supported by a strong malty backbone.
