The Richmond Flying Squirrels and COTU Brewing proudly present an amber lager as crisp as opening night and as smooth as a walk-off swing. Chin Music is the perfect brew to enjoy while watching America’s favorite pastime, baseball. COTU uses water that is similar to some of the great lager-brewing areas of Europe. Four different malted barleys are used in the mashing process. In the boil kettle, German Tettnang hops create a modest bitterness, just enough to balance with the malt. A Czech yeast strain is used during fermentation that leaves the beer looking clean and tasting malty. Chin Music then goes through a cold conditioning period(lagering) until the flavors are just right. Naturally carbonated, Chin Music is then filtered to remove any excess yeast. The result is a beautiful and crisp amber lager from COTU. Leave the ordinary beer in the bat rack. And swing away with Chin Music.

Caution, one too many may cause you to talk Shite. It combines a chewy malt forward mouth feel balanced by a moderate hopping rate delivered by challenger golding and fuggles hops. Dangerously Quaffable at 38 IBU, Beer to savor over a good conversation.

Michigan Wet/Fresh Hop Ale

Brewed to style, this India Pale Ale highlights the unique characteristics of the Chinook hop. Spicy, piney, grapefruity aromas and flavors are complemented and balanced by a complex sweetness added by the crystal malt in the grain bill. This beer's IBU level only reaches into the mid 40's which allows the spicy character of the Chinook hop to come through smoothly without a cloying hop bitterness.

A medium hopped ale with overtones of citrus from local Chinook hops for bitterness with a nice floral finish from Cascade hops. A refreshing way to end a busy day.

Our chipotle smoked porter is a spicy twist on our traditional smoked porter. The same delicious smokey beer has been brewed with chipotle peppers to give it an extra fiery kick.

Our Chipotle Smoked Stout is the result of a collaboration with Chefs Nick Balla and Courtney Burns of Bar Tartine. Tartine’s Hungarian/Eastern European-inspired cuisine overflows with creativity and originality. This stems from their dedication to creating everything in-house, the old-fashioned way. This includes smoking peppers and making their own paprika. Nick shared some of his house-made chipotles with us and we fell in love—smokey and sweet with a delicate heat and deep intoxicating aroma—we knew we had to build a beer around them. Inspired by these chipotles, we combined them with Cherry-wood smoked malt and black and chocolate roasted malts to create a rich, deep beer with just a hint of chipotle heat hiding in the finish. Pair this 9% sipper with BBQ, goulashes and whatever is on special at Bar Tartine.

An Amber Lager. Clean caramel malt flavor and balanced with a touch of Saaz hops.

A father's love for his first born daughter reaches beyond the moon and stars. CHLOE is sweet as the day she was born: bold and spirited with a passion that could stop a train, yet delicate and graceful like a stroll through Parisian streets. Subtle tartness and citrus notes of Hibiscus balance the French Saison in the sweet caress of the Blood Orange.

Inspired by and working closely with a local restaurateur friend, we set out to brew a beer that would pair well with sushi. After numerous tweaks, changes and iterations, a final version came through - a "chosen" beer among many. We decided to call it Cho’Sen. The challenge was to create a beer light in color that not only prepares the palate for the next delicate piece of sushi but also has a flavor profile that stands on its own. Tough to categorize this one though; the Light Hybrid Ale is a space that includes such beers as cream ale, blonde ale or Kolsch. Cho’Sen would likely be considered a hybrid, but does not fit within the designs of any specific style within that category. It is its own unique creature, can't put it in a box (that's why it's on draught!)
