Dos Cocoas

Side Project #4 “Dos Cocoas” Chocolate Porter is a little experiment with a traditional porter and two types of cocoa. I used cocoa powder in the whirlpool and then aged the beer for one month on a bed of cocoa nibs. What you will get from this beer is fine chocolate aroma, a unique chocolate bitterness and a tantalizing balanced chocolate flavor from both the cocoa powder and nibs. The original, 2008 version, was a collaboration project with Cocoa Atlanta, who supplied us with the cocoa for this experiment. The revived 2013 version uses cocoa shells and nibs from Olive and Sinclair Chocolate Company.

Dos Cone Es

IPA at its biggest, with close to 4lbs of hops per barrel, the finished product is 135 IBU. The extensive hop additions aren’t just bitter but add flavor and aroma. The high ABV of 11.5% takes the edge off with malty sweetness. Dos Cone Es gets its name because it is a double “Dos” of the Coulter IPA, which is named after the largest pine “Cone” on earth and the “Es” simply is… Also, if you say it fast after having a few is sounds like “Dos cojones”. We also brew an oaked version.

Dos Excellente

This tasty Mexican lager comes just in time for Cinco de Mayo! Mexican lagers got their start when Austrian brewers moved to Mexico and began brewing their Vienna-style lagers… just with different scenery. These original beers have evolved to the cheaper, light beers we see in the coolers at convenience stores. Our version goes back to the Mexican lager’s roots, with a beer that very easy drinking, but doesn’t sacrifice taste. It’s crisp and smooth, with a soft maltiness. Go the extra mile and try it with a lime!

Dos Ghosts

Gose brewed with orange slices, lime juice, smoked malt, and salt. This beer is so light and flavorful, it's begging for a porch or a pontoon to be sipped on or something spicy to be paired with. The slight touch of smoked malt combined with the tart lime juice and orange peel give it mezcal margarita vibes.

Dos Rios Vienna Lager

This is a classic amber lager with drinkability. Generous portions of toasted malt give this beer a brick red color and a smooth, malty flavor. This beer is based on a recipe from a Mexican brewer of the 19th century named Santiago Graf. Dos Rios was a silver medal winner at the Great American Beer Festival in 2002, 2003 and 2007!!

Like a Russian Matryoshka or 'nesting' doll, the secret of Dosvidanya® Russian Imperial Stout lies locked deep within her mysterious & elaborate wooden layers. The hidden soul of this oak bourbon barrel-aged beer that we said Dosvidanya ('goodbye') to several months before revealing, is its rich flavors like dark chocolate, toffee, black cherries and coffee along with robust & roasty maltiness that finishes dry.

Double Bastard Ale

This is a lacerative muther of a beer. The evil big brother of Arrogant Bastard Ale. It is strongly suggested you stay far, far away from this beer. Those foolish enough to venture close enough to taste will experience a punishingly unforgiving assault on the palate. ’Course there’s always the masochists... Note: 2007 - 10%, 2008 & 2009 - 10.5%, 2010 - 11.2%, 2011 - 10.5%, 2012 - 11.2%.

Double Bastard Ale Depth-Charged

A huge malt bill and a belligerent hoppiness make this heavy ale one that will be appreciated by only a few, and that's just fine with us. We didn't brew this mordant dark amber monster to please anyone other than ourselves. If you think you are truly worthy, then crack open a bottle, drink deeply, and bask in all its trenchant glory - but if you are befuddled by the polysyllabic lexicon of the Bastard, if your complacency and contented acquiescence to the soulless mendacity of national marking pap causes you the least bit of hesitation, back away slowly and go buy something you saw advertised on TV.

Double Bastard Bigger Longer Uncut

My arrogance has metamorphosed into a peatier, haughtier, boozier, doubler, more “er” of everything version of itself. Unlike the malted substance, which abetted my materialization, you don’t have chiseled iceberg chunks or fizzy, sugary pop sugar crystals at your disposal to cut me or soften the unbridled intensity of my righteous state that is liquid arrogance. Go ahead. Try me. This Islay whisky barrel-infused ale could put a lion’s mane on a hairless cat. 100% AGED IN ISLAY SCOTCH WHISKY BARRELS

Double Battle Axe

This beer uses a “damn the cost” approach to recipe design. We use 6 lbs of hops per BBL with a majority of those hops being used in late whirlpool additions and dry hopping. Following our steadfast commitment to drinkability in our beers, the abundance of hops produces a significant citrusy aroma and creates a unique “hop nectar” flavor that will surely satisfy the Imperial IPA aficionado. This beer also has a very light, dry malt profile that allows the intense hop flavors to explode from the glass.

Double Bean Blonde

Darkness and romance lurk beneath the golden exterior of this ale that combines the prominent flavors and aromas of coffee and the smooth richness of chocolate. We use simple, straightforward malts and hops to keep the focus on the notable characteristics of the featured ingredients. After the beer is fermented, we let it rest on cocoa nibs sourced from Ghana—one of the world’s largest chocolate exporters. In the final stage of production we add a cold coffee toddy made from filtered water and finely ground beans roasted by St. Louis’ own Kaldi’s Coffee and sourced directly from the Shiwanda Estate in Africa’s southeastern Tanzania.
