Erik’s Sweet IPA

We’ve put the finishing touches on our Sweet IPA and… We have a name! This sweet IPA was first released at the retirement party of our dear friend, and co-owner of Wig Wam Pub, Erik Sweet. The beer was brewed to be a play on his name while celebrating over 26 years in the Navy. After the partying settled we took to Facebook to let our followers and regular customers choose the official name for the beer. Suggestions piled in with hundreds of entries! While we were narrowing down the names, on the weekend of April 26, Erik was taken from this world. As a warrior and friend, we’ve decided to immortalize his memory in Valhöll. The Sweet IPA, will now forever bare the name: Erik’s Sweet IPA. We’ve made some finite tweaks to the original recipe, but the important parts remain the same: ABV: 7.4% Hops: Amarillo, Centennial, Cascade, and Citra

Ermagerdness

A light bodied golden colored Pale Ale with zesty tangerine and pineapple aromatics. A simplified malt bill, along with some signature American hops, allows for an awesome burst of tropical fruit flavors up front. It then shifts toward an interesting herbal tasting bitterness, which builds and lingers on the back of the palate. This new American India Pale Ale is what Ryan Hale, the head brewer at the Bellaire pub, referred to as his quintessential IPA. Ryan combined all of his favorite hops resulting in what he described as “pure juicy goodness”. This beer is loaded with all of the big citrus and fruity flavors American hops can offer.

A homage to the Extra Special Bitters of England, the Six String ESB uses only UK malt and hops from the U.K. This has pretty much everything you’d seek from a classic ESB; copper colour, biscuity, malty aromas with floral notes and – despite the name – not overly bitter (at least not when compared to something like, say, the Dark Red IPA). A beer like this changes greatly depending on the system used to dispense it. Served at cellar temperature from a traditional beer engine – the way UK expats demand it – you’ll get a beer that’s got a tight white creamy head, smooth and creamy mouthfeel and next to no carbonation. Serve the same beer through a standard refrigerated tap system and you’re looking at a beer with a much lighter flavour and mouthfeel plus a slight chill haze. While some are convinced you can never fully replicate an authentic ESB unless you’re in England, you can get pretty damn close. So, find this on a beer engine if you can but don’t worry too much if you can’t – there’s plenty in this beer to be enjoyed, however it comes.

Leave it to the Brits to make distinctions between beers (bitters) that are Ordinary, Special, and Extra Special when in reality they are all super Awesome. Think of them as pale ales with slightly different jobs to do: Ordinary is your morning beer (low abv), The Special is for afternoon (a bit more...), and The Extra Special (ESB) as your sipper for a fine meal and long-winded discussions amongst friends. We built our ESB with Marris Otter and some Crystal Malt that lends a nice burnt sugar note and Chinook bittering hops offering a slightly rustic bitterness. Obviously we kept to England for the finishing hops - Fuggle all the way home.
