This is homebrewer Gary Lockwood’s winning recipe of the Wine and Hop Shop’s annual homebrew competition “Hoptoberfest” in 2013. We converted the recipe to our system and had Gary spend the day here brewing his winner with us, then we put it on tap to celebrate his victory. This was a single hop (Citra) beauty with a powerful mango aroma and clean, crisp grain bill that leads to a smooth, zesty finish. The whole barrel was sold out in just one weekend, Cheers Gary!

Ghoulschip

Allagash Ghoulschip is our version of a pumpkin beer. We brewed it, on Halloween 2008, with a monster mash that included shredded Maine pumpkin and toasted pumpkin seeds. After much toil and some trouble, molasses were added to the boil. The wort then spent the night outside, in our Coolship, possessed by the yeasts of beers past. In the morning, the cooled wort was racked into a stainless tank and pitched with our house yeast. After primary fermentation the beer is then transferred to oak barrels. Ghoulschip fermented and aged in the dark recesses of our cellars for almost three years. The resulting beer is light bodied and pumpkiny in color. Apricot dominates the aroma, with vanilla and caramel lurking in the background. The flavor profile is scarily clean, with a dry, tart finish that will haunt you. Boo

Gift of the Magi

It seems that everyone knows the story of the Three Kings. Sent to follow the star in the sky each brought a gift for the baby they sought. One King brought Gold, the other Frankincense and the other Myrrh. Many breweries produce a Christmas Seasonal beer and this is our beer to celebrate the holiday season. Gold in color and bittered with the bark of Frankincense, we have even used the smallest amount of Myrrh which is an herb that has roots in ancient winemaking as well. The beer starts off with an initial malt sweetness that fades into a firm but subtle hop presence. The lager yeast and cold maturation ensure a crisp smooth finish. As the beer matures, the Brettanomyces added at bottling will become more pronounced and a drier beer will evolve.

Like many breweries, our Double IPA is loaded with American hops, but we just couldn’t help ourselves, so we went ahead and added some English hops too. GigaBoss is unfiltered, meaning the rawness from the hops really shine through. And while the hops are certainly present on the nose & palette, the bitterness at the finish is surprisingly smooth & balanced. At 9.5% ABV, this is certainly not sessionable. But we find it to be incredibly drinkable… and we hope you’ll agree.

Gilda's Cherry Saison

This beer is made with a Saison Dupont yeast blend. One yeast strain lends to aromatics while the other finishes the beer to a low gravity. We used a low temperature acid rest to increase acid levels and added a load of Michigan Montgomery Cherries. There was no temperature control while this was in the ferm, and when she settled out we dry hopped her with rose petals.

Continuing our adventure into the realm of sour ale brewing, we designed a recipe to create an Upland version of a traditional Flanders Red. Melding flaked maize into a turbid mash and adding Belgian candi sugar during a long kettle boil, we prepared this ale for epic proportions. We then incorporated wild yeasts and other acetic and lactic acid producing microorganisms for a year-long oak fermentation in bourbon barrels, which had previously been utilized to age beer. The journey was worth the hardships.
