Even Keel

Ten different malts and six different hops (Ahtanum, Cluster, and Spalt to name a few) combine to create this full-flavored, small beer. EXHIBITION SESSION IPA

Tasting Notes: Nose: Citrus and straw. Palate: West coast hop flavours greet the palate. Primarily grapefruit and gooseberry, with a mild grass and spice note from the Amarillo hops. Light yet present malt tastes move in behind. The beer finishes crisp and dry, with a very mild training bitterness. Other Notes: First off this beer is not a traditional IPA, so those expecting a huge nit of bitterness will be disappointed. Session IPAs are lighter bodied and lighter in alcohol than a normal American IPA. Hop, and bitterness is used in beer to balance the alcohol. In a beer with a lower abv, the IBU must be lower as well in order for the beer to maintain its balance. In a session IPA very little bittering hop is used. Hops are added very late in the brewing process to create a strong aroma and flavour profile. This style is intended to a hop forward light beer, something that is well suited to the patio and hot weather. The session in the name refers to this style being a beer that one could consume in larger amounts due to the lower alcohol content.

Exit 16-Wild Rice Double

Although usually identified with landfills and pipelines, the Hackensack Meadowlands is an amazingly diverse ecosystem providing vital animal and plant habitat. In a nod to a once common food plant here, we’ve brewed this beer with wild rice. We also added organic brown and white rice, as well as pils and pale malts. Rice helps the beer ferment dry to better showcase the five different hops we added. Lots and lots of them. We then dry-hopped this Double IPA with even more–generous additions of Chinook and Citra hops to create a nose that hints at tangerine, mango, papaya and pine. This beer pairs extremely well with spicy foods and all kinds of seafood. And of course, it’s quite enjoyable all by itself. We tend to do things a little differently here at Ritual, so when the call came in to make a new style Red ale, we immediately deferred to the full-flavored segment of the taste spectrum. We certainly didn’t skimp on the malts (after all, we used eight different varieties), giving this beer a multi-layered complexity of caramel and toffee. Balancing out the malty backbone required hops, hops and even a few more hops.
