True red in color with a frothy pink head, Flor de Jamaica (pronounced HA-MY-KA) is a deeply refreshing Hibiscus infused ale, perfectly thirst-quenching. The Cracker Cowboys of Florida were colonial-era settlers, often of Scots-Irish descent, who arrived in Florida when Spain traded their territory of La Florida to the English. The term Cracker in Florida usage relates to the whip these "cow hunters" used to herd cattle in Florida’s Palmetto Prairies. Called Quáqueros by the Spanish, these hardy and hard working Cracker Cowboys helped to shape the history of Florida, the nation’s oldest cattle raising state. We brew Florida Cracker White ale with unmalted wheat, orange peel and coriander and then ferment it with a French Saison yeast strain to give it a spicy and dry finish. Perfect for a warm day on the Palmetto Prairie.

The English brewed this style of stout for the Russian Czars. One thing was certain. This beer wasn’t going to freeze at twelve percent alcohol during the cold Russian winters. This stout is brewed with twice the amount of malt and hops of most beers. The flavor is very roasted, coffee, sweet and a hint of coconut. It goes down warm due to the higher alcohol volume. We serve our Russian Stout in a brandy snifter to let is slowly warm up to release its entire flavor. A great beer with cigars.

California means sand, surf and sun on the “101”, and the Central Coast is no exception. Here the mountains meet the sea so we brewed this Kölsch-style beer as the best of both worlds.  This crisp, clean ale has notes of fresh cut grass, hay and mild sweet malt flavors paired with a light to medium body.  Enjoy this thirst-quenching brew outdoors in the afternoon sun.

Fortunate Islands shares the characteristics of an uber-hoppy IPA and an easy drinking wheat beer. A massive dose of Citra and Amarillo hops gives it a blastwave of tropical hop aromatics: mango, tangerine, and passionfruit all leap out of the glass. Brewed with 60% wheat malt, Fortunate Islands also has the mild, nutty malt backbone, reasonable ABV, and restrained bitterness to make it an outstanding session beer.

Founding Fathers Lager is a full-bodied American Lager with rich amber color. Two row barley, a blend of three classic American hops from the Pacific Northwest, and a touch of roasted carmel malt will make this the new American favorite.

Four is truly a light yet flavorful beer. The recipe uses a good portion of wheat and incorporates a sour mash into the process to make it slightly tart and extra refreshing. It has delicate aromas and flavors that span a range of floral, grassy and herbal notes. We want to let you know that the paraphrased statement below was and is our intention. We will not be doing that as we wanted. We will instead be doing 2 styles and working into 4. We being new and not having enough distribution yet, were not able to rotate the beers like we wanted. (We will be making 4 different styles of IPA for the 4 seasons. They will be numbered and offered for one season each. 4 Seasons IPA may end up being one style, the customers will decide that by buying one more than the others. ) India Pale Ale is a wonderful example of marriage. Scottish Ales traditionally go through a long boil in the kettle for a caramelization of the wort. This produces a deep copper to brown in color brew and a higher level of unfermentable sugars which create a rich mouthfeel and malty flavors and aromas. Overall hop character is low, light floral or herbal, allowing its signature malt profile to be the highlight. Fox River Scotch Ale has subtle smoky taste that cuts the sweetness and has a nuttiness to it for a very nice finish.

Fracture Imperial India Ale is brewed with Centennial Citra, Columbus & Simcoe Hops, then dry hopped twice for aroma. Experience layers of citrus and pine flavours with a long, resiny finish.
