Florida Cracker

The Cracker Cowboys of Florida were colonial-era settlers, often of Scots-Irish descent, who arrived in Florida when Spain traded their territory of La Florida to the English. The term Cracker in Florida usage relates to the whip these "cow hunters" used to herd cattle in Florida’s Palmetto Prairies. Called Quáqueros by the Spanish, these hardy and hard working Cracker Cowboys helped to shape the history of Florida, the nation’s oldest cattle raising state. We brew Florida Cracker White ale with unmalted wheat, orange peel and coriander and then ferment it with a French Saison yeast strain to give it a spicy and dry finish. Perfect for a warm day on the Palmetto Prairie.

Flying Buffalo Russian Imperial Stout

The English brewed this style of stout for the Russian Czars. One thing was certain. This beer wasn’t going to freeze at twelve percent alcohol during the cold Russian winters. This stout is brewed with twice the amount of malt and hops of most beers. The flavor is very roasted, coffee, sweet and a hint of coconut. It goes down warm due to the higher alcohol volume. We serve our Russian Stout in a brandy snifter to let is slowly warm up to release its entire flavor. A great beer with cigars.

Foul Weather Jack

A classic English Mild Ale named for a British Admiral. Every time this 18th century sailor went to sea he went in a doomed ship that sank due to beastly weather. The Foul Weather Jack is a dry, roasty, session beer, with chocolate notes. It is equally satisfying on a hot summer day, or a cold rainy night at sea.

Foundry Golden Cider

Foundry Golden Cider is an imported, 4.5% ABV cider. Crafted in the traditional English style using only the best quality apples, Foundry Golden Cider is matured slowly to produce a refreshingly dry, crisp apple flavour. Although served cold, Foundry Golden Cider is best enjoyed without ice. Ice dilutes the flavour and unlike some ciders, we've got nothing to hide. Our cider is best enjoyed in a chilled pint glass. Mainly because that's the only way you can buy it.

Four Seasons IPA

We want to let you know that the paraphrased statement below was and is our intention. We will not be doing that as we wanted. We will instead be doing 2 styles and working into 4. We being new and not having enough distribution yet, were not able to rotate the beers like we wanted. (We will be making 4 different styles of IPA for the 4 seasons. They will be numbered and offered for one season each. 4 Seasons IPA may end up being one style, the customers will decide that by buying one more than the others. ) India Pale Ale is a wonderful example of marriage. Bitter Hops and Boasting Barley come together to make one of the most sought after ales of the Craft Beer masses. Bottle Conditioned and Refermented. From now on we will do a Summer and Winter. Hey we tried and we will fulfill our quest to do 4.

Four Squared

To celebrate the brewery’s 16th 42 anniversary, we created this pale ale — a nod to our top-selling beer, Firemans #4. We start with components of our Firemans recipe, increase the gravity, augment with pale crystal malt and additional hop varieties, and finish with a significant dry-hop. The result is an ale with a clean, dry finish and a substantial tropical hop flavor and aroma. If you think this ale is awesome, just wait until our 64th 43 anniversary.

Fox River Scotch Ale

Scottish Ales traditionally go through a long boil in the kettle for a caramelization of the wort. This produces a deep copper to brown in color brew and a higher level of unfermentable sugars which create a rich mouthfeel and malty flavors and aromas. Overall hop character is low, light floral or herbal, allowing its signature malt profile to be the highlight. Fox River Scotch Ale has subtle smoky taste that cuts the sweetness and has a nuttiness to it for a very nice finish.

Fox Tail

They said we couldn’t make a Gluten Free Ale that was worthy of the Joseph James name. We gladly took up the challenge and not only created a deliciously hoppy Pale Ale, but we were also the first to put one in a can! Aggressive American Hops accentuate and harmonize with the crisp pear like esters magically provided by a Brown Rice and Sorghum fermentation creating this Post Modern interpretation of a Pale Ale.
