Noble Rot is the head-on collision of the beer world and the wine world ... and now we've aged it on oak ... for a whole year! This saison-esque science project gets complexity and fermentable sugars from the addition of two unique white wine grapes, sourced with our friends at Alexandria Nicole Cellars in Prosser, Washington. The first addition is the must of viognier grapes that have been infected with a benevolent fungus called botrytis. This 'noble rot' reduces the water content in the grapes while magnifying their sweetness and complexity. The second is a pinot gris intensified by a process called 'dropping fruit,' where large clusters of grapes are clipped to amplify the quality and distinction of those left behind. We then aged Noble Rot in one of our oak tanks for an entire year, making for a hazy ale that has a spicy white wine body and a dry, tart finish.

Pearly-opalescent, this 100% wheat malt hefeweizen is our Spring Seasonal, encouraging the sitting out of doors and the engaging of pleasant conversation. The malt is imported from Bamberg, Franconia and is kilned via a special process with extra care. An unusual Polish Style beer, our version of the Grodzizkie is made with the refreshing knob turned up to eleven.

I am pleased to share with you our Oaked Diabolik Ale. This Belgian-style sour ale is another in our limited-edition series of barrel-aged beers. Brewed with 100% imported German Pilsner malt and Spalt hops, fermented in stainless steel vessels and then aged in oak barrels which lend a complex wild sourness and woody dryness to the palate. We took 5 gallons of our French Quarter Porter and added whiskey barrel wood chips to give it a distinct whiskey-infused flavor.

Fermented with raisins and oak chips, this semi-dry cider is back-sweetened with pure Vermont maple syrup. Offering notes of vanilla and oak with a hint of maple, this unique cider is the perfect accompaniment to chilly winter weather. APPLES: Smith, Fuji, Red Delicious, Golden Delicious, Gala

A floral nose gives way to slight flavors of caramel balanced by hints of unsweetened tea leading to a dry finish with lingering oak.

Aged in Catoctin Creek Roundstone Rye white oak barrels, Slobberknocker picks up vanilla and hints of toffee along with some oak dryness. This is a very complex sipping beer that rewards the patient as it warms and the barrel character expresses.

Deeply malty, with caramel apparent. Smoky secondary aromas are also present, adding complexity. Hops are quite low. Dark brown color, with deep ruby highlights. Clear with a large tan head. Richly malt with kettle caramelization. Hints of roasted malt and smoky flavor are present. Hop flavors and bitterness are medium-low, so malt impression dominates. Full-bodied, having a thick, chewy viscosity. A smooth, alcoholic warmth is present and is quite welcome since it balances the malty sweetness. Moderate carbonation. 8.1% ABV.

Aged in oak chips, giving it a caramel and nutty body and a warm sweet character with hints of chocolate and vanilla.

Our twist on the German Märzen bier, we give you a Paso Märzen. Traditional imported malts offer subtle honey-like aromas with hints of Noble hop spice. The stars of this brew are the imported Pilsner and Vienna malts that offer malty sweetness that carry through to the end. German Hallertau hops add rich Noble hop character to balance this exceptional Marzen. This beer is 100% stainless steel and gets the name Oaktoberfest as an ode to our hometown, Paso Robles, Spanish for "Pass of The Oaks". True to Oktoberfest custom, this beer makes its debut in time for fall to celebrate the age-old German tradition.
