Traditional English-Style Brown Ale. Brewed with imported English Ale Malt and a touch of Crystal and Chocolate Malts for a mild character, and gently hopped with English Golding Hops for a smooth balance. This classic beer illustrated that dark beers are sometimes the smoothest.

Named after the man who built the golf course and still walks the grounds to this day. This huge Russian Imperial Stout is sweet and roasty with a hidden bitterness and an A.B.V. that will have you conversing with Ransom himself.

Throughout the night, we often dream up different techniques to apply to tried-and-true beer styles. Olfactory Hues takes the IPA template and spins it on its head. We kept the moist green aroma hops out of the boil completely, instead adding ony bittering hops. We then used our lauter as a giant hop back, filtering the entire beer (cold) though 150 lbs of whole leaf Amarillo, Summit, and Cascade hops. The end result is a nose so overwhelming you can smell the colors all the way from your lawn. An ale that pours and tastes like a lager. Brewed with noble Saaz hops, it has a smooth, soft mouth feel and pairs well with almost anything.

This trio of Wyld Sisters are unique blends of various beer batches, each of which underwent a variety of maturation periods in oak barrels. These wooden vessels provide the perfect habitat for Brettanomyces, whose servitude artistically brings the funk. Different berry varietals were incorporated during the lengthy process to add unique fruit flavors. Cousins to last year’s Wyrd Sisters, Wyld Sisters illustrates our first blending experiment. Pale bronze colour with a spicy aroma. Tart fruit builds in the mouth with balanced malt and a bitter hop finish.

Ol’ Floyd’s immediately welcomes the senses with its rich mahogany color and warm honey aromas. The medium-bodied ale has complex Belgian esters and golden raisin sweetness to balance its subtle alcohol warmth before a dry finish.

An older, wiser, and an even more delicious El Guerrero Double Chilean Stout. This “Old Warrior” is a powerful, barrel-aged foreign stout that balances the complexity of aged whiskey, strength of espresso, spiciness of smoky peppers, and sweetness of wildflower honey.

This Strong Ale is sweet and fruity, balanced with a generous amount of hops. Fashioned after the “Old” ales of England this beer is intended to be heavy in alcohol. Ol’ Stinky’s has a small amount of Roasted Barley for color. In addition to a large amount of bittering hops, this beer is also dry hopped. The alcohol content is 8.2%. Ol’ Stinky’s is the first signature beer of Rob “Stinky” Denton.

Blond sour ale. We've been brewing the barrel aged version of this beer, Wild West, for quite some time. We recently decided to bottle the non-barrel aged version as well, as one of the Greek trilogy (together with Sigma and Phi). If you are looking for a drink that is refreshing and effervescent, you have to try Omega. The citrus and apple flavors and their blending give a beautiful touch to this beer.
