Culture Project #1

The first release in our Culture Project series is a delicately tart red ale inspired by the Flemish tradition. We used pilsner malt for the base with a blend of carared, red fife wheat, crystal, & Munich malts to create a complex malt profile with a red hue, then added just enough Amarillo hops to create a subtle, fruity hop profile. A saison yeast was used for primary fermentation before the beer was transferred into oak red wine barrels & introduced to a blend of lactobacilli, pediococcus, & brettanomyces. After 12 months, the barrels were blended back into stainless and packaged. The result is a red ale with a complex acid profile and rich flavors of cherry, stone fruit, & oak.

One Brazillion Dollars

This beer is exquisite and exotic. A collaboration with Morada Brewery from Curitiba, Brazil. We created a barrel aged wheat wine that is beyond any form of global currency. This beer is strong and sturdy. The malt bill is packed full of white wheat malt and pale ale malt, we then finished it off with smoked malt and a touch of caramel malt. The wheat used was smoked by using some exotic Amazonian wood that you have never heard of because it is so rare. We added nugget hops for a herbal and spicy bitterness. This beer was then aged in Angel’s Envy bourbon barrels for eight weeks. Do not take this beer lightly, as it emits a golden color of prosperity. Be frugal.

Oneida

Oneida is Hallertau Blanc-centric. The bright tropical fruit and lemongrass notes give it an uber-pungent aroma, with the grapefruity citrus of Cascade providing a touch of balance. We've also added experimental hop variety 05256 to the mix, adding a nice hop complexity while keeping it a drinkable pale ale. While more aggressively bitter than Fortunate Islands, Oneida still has a light body and moderate ABV. We're considering making Oneida our spring seasonal, but that's all kind of up in the air.
