Quadraphonic

Quadraphonic is the strongest of our Abbey series and is meant to be sipped and savored. It is a dark brown ale with a complex profile. On the nose, expect malty sweetness with complex esters including some dark fruit aromas (raisin, plum, fig). The mouth feel is medium carbonation with full body, there is a rich creamy head. The flavor is rich and full, a real “mouth bomb”. Malt flavors predominate, with spicy and dark fruit notes raisins and dark cherries with dark chocolate come to mind. It is fairly dry for the ABV, keeping it “digestible” as the Belgians would say. This is a smooth drinking beer that can be dangerous, go easy on this one!

Quadrophenia

As its namesake suggests, Quadrophenia is a Belgian style quadruple ale. We ferment Quadrophenia using Trappist ale yeast, which produces the spicy, phenolic flavors sometimes mistaken for added spices. The unique characteristics of caramel don’t come from the Pale and Munich malts, but from the introduction of Coconut Palm Sugar used in the brewing process.

Quadrophobia

This Belgian Quad is a very malty and rich beer that is best paired with red meats and darker flavored dishes. A great Winter beer, the alcohol and malt background bring a complexity few other beers have. It ages beautifully and is a 'special occasion' beer.

Quadrotriticale - Stochasticity Project

Trappist ales as we know them have a proud lineage dating back nearly a century. Rather than follow the footsteps of the monks who forged the quadrupel—the warmest and darkest of monastery offerings—we aimed to test its inherent makeup. In doing so, we added triticale, a hybrid grain combining the pleasant flavor of wheat with the elemental durability and spice of rye, to breathe new life into the malt bill. Because of this, this reimagined brew comes across differently than its classic Belgian predecessors, and beautifully so. Lower in sweetness, but rich with flavors mirroring dried fruit, it’s a modern interpretation of one of the most historically sacred styles on Earth.

Quadrupel

Schlafly Quadrupel is, as its name implies, a serious beer. But don’t be intimidated. This fourth beer in our bottle-conditioned Belgian-style beer series has a rich, malty backbone that is generously balanced by select, fresh hops to create a luscious, smooth character. Sharing it with friends enhances the enjoyment, whether in front of a roaring fire or at the finest dinner party. This beer pairs perfectly with all types of food, particularly those with assertive flavors. Remember to store this at cellar temperatures and serve it slightly chilled.

Quadrupel Tonnellerie

Our Tonnellerie series is the perfect showcase of our "wildly traditional bière". French for “cooperage”, each beer in the series shares one core trait: they were all fermented in oak. Beyond that, the recipes and styles are as unique as the cues they take from nature. Quadrupel Tonnellerie, a sour and funky barrel-fermented Belgian-style quadrupel with blackberries, is no exception. A style known for being at the more malty, complex and rich end of the Belgian strong ale spectrum, this quad revels in layers of dark fruit and figgy flavors, and complimentary undercurrents of oak. The natural esters from the Belgian yeast compliment the rustic, earthy and wild qualities derived from the barrels and nature - plus the piquant flavors from the fruit - for a dynamic flavor profile and mouthfeel that will evolve over time.

Quaker City Stout

Although we don't recommend waking up to a pint of oatmeal stout, this version contains a traditional breakfast ingredient. Flaked oats add a smooth, silky mouthfeel to this already full-bodied stout while the use of roasted barley and chocolate malts contribute to its black color and strong, roasty flavor. Even with its relatively modest alcohol content, this is one of the heartiest beers we brew.

This Pale is another "NW Pale Ale" from Ninkasi. This beer is more in line with the traditional style. A touch of caramel flavor and clean malt flavor balance the floral and earthy hop flavor and aroma which differenciates us from most of the citrusy NW Pales in the market. Balance is the key word again in this local favorite. This Pale is another "NW Pale Ale" from Ninkasi. This beer is more in line with the traditional style. Quasimodo

Quasimodo is inspired by the best of Belgium, specifically the brothers of the cloth devoted to the brewing arts. A classic, full-bodied quadrupel ale-for us, it is the measure of brewing perfection. Dark, savory and fruity, yet with a dry, bittersweet finish enhanced with traditional Belgian candy sugar, Quasimodo is dangerously drinkable. Re-fermented in the bottle and naturally carbonated, it can ring your bells now… or years from now.

Queen Anne's Revenge: Carolinian Dark

This beer was designed to be a darker version of an English-style IPA, to show off the soft bitterness of traditional English hops but to balance them with the rich chocolate of roasted malt. The name “Carolinian Dark” is a dig at “Cascadian Dark” ales which seem to somehow suggest that either the PNW has the only available line on hops, or perhaps that it’s made by elves.
