R&D: Sasquatch Legacy Baltic Porter

The Sasquatch Legacy Project, started by Walking Man Brewing and transitioned to Ninkasi Brewing, invites each year’s Glen Hay Falconer Scholarship recipients to come to our brewery and make a beer together. Proceeds from this beer will go to support the Glen Hay Falconer Foundation and the Northwest Legends Foundation, whose missions are to educate brewers and support the community in memory of our lost brewing friend, Glen Falconer. The 2012 scholarship recipients came together to create this year’s brew, including Anthony Stone of Boundary Bay Brewing Company, Jeremiah Boone of Anchorage Brewing Company, and Scott Caul a Corvallis-area home brewer. Using hop varietals preferred by Glen, we cheers this brew to his honor!

This is a Ninkasi take on a Belgian Tripel. Tripels are brewed with Belgian-style yeast contributing a spicy, clove-like aroma with citrusy and floral notes. They are generally effervescent with a long-lasting, dense white head. We brewed ours with Pilsner and Carapils malts, as well as Hallertau and Saaz hops. Enjoy!
