Dark Lord Aged in Porto and Madeira Barrels

Rings true to its name. Built for the end of the shift, a long weekend on the lake or at the beach, or a hard-earned reward at the end of a hike. This beer is easy drinking yet phenolic enough to keep it challenging. Big. Dry. Phenolic. Noble Hoppinness. Loud.

A rich dark heavier ale made with chocolate, black and roasted barley malts and gelatinized oatmeal. Lightly hopped, this brew is slightly sweet, full of body and flavor.

ALT Pale ALe

We’ve developed many IPA recipes in our R&D program, but right from the tank, our Manta Ray Double IPA was a winner. Aromas of fresh, citrusy tangerine, melon and light pine leap from the beer and linger over a smooth finish. Like its namesake, this brew can sneak up on you – a big beer without a bite.

The Sasquatch Legacy Project, started by Walking Man Brewing and transitioned to Ninkasi Brewing, invites each year’s Glen Hay Falconer Scholarship recipients to come to our brewery and make a beer together. Proceeds from this beer will go to support the Glen Hay Falconer Foundation and the Northwest Legends Foundation, whose missions are to educate brewers and support the community in memory of our lost brewing friend, Glen Falconer. The 2012 scholarship recipients came together to create this year’s brew, including Anthony Stone of Boundary Bay Brewing Company, Jeremiah Boone of Anchorage Brewing Company, and Scott Caul a Corvallis-area home brewer. Using hop varietals preferred by Glen, we cheers this brew to his honor!

Named in honor of famed Indian mathematician Ramanujan. The inaugural batch of this beer was a collaboration with our esteemed colleague Matt Welz. Simcoe + Citra = R’.

This Franco-Belgian style Farmhouse Ale has an effervescent body and a light straw color. Rabbid Rabbit, with its light malt body, augmented by spices, is a complex and frothy beverage with a deceptively high alcohol content.

Rye IPA

Cocoa on the nose preludes this full bodied imperial stout with notes of coffee creeping through a thick layer of rich cocoa and oats leading into a warm and slightly bitter finish. Try this stout over your favorite vanilla bean ice cream for an outstanding beer float!

A collaboration with one of our favorite local bands--"Rabbit in the Rye." A Session Rye IPA, full of floral and spicy hop notes, brewed with NY State barley and rye. Like the band, a balance between rustic, earthy tones, and progressive flavor.

This English-style brown ale has an alluring mahogany color capped by a rich foam head. Although dark in color, this is is brewed with several different varieties of premium malted barley, creating a robust body and delicious flavor profile. Its ripe fruit notes and sweet finish are counterbalanced by a subtle hop bitterness and aroma.

Aromas of roasted malts and chocolate. Has a delicate chocolate beginning then finishes dry. A combination of malts including chocolate, Midnight Wheat and crystal blend splendidly with dark cocoa for a perfect balance of sweet and bitter making this a very palatable chocolate porter for even the novice drinker.
