It’s the most distinctive beer we make. A mild smokiness taste using barley dried over an open flame. This method of kilning is known from as far back as the first century BC, and we try to bring this taste to you today (made in the Mountains of New York State, of course). This smoke beer adds a curiosity. It is a beer that balances the right blend of smoked malt, to sweet malt, to hops and water. Together with the specifically chosen yeast strain we pride ourselves to deliver this premier taste. The beer takes a six month special process to properly mellow the smoke and lager.

Munich malts and beech wood unite to create our Rauchbier, a traditionally German Marzen-style lager that is unique in its orange-brown color and forward, smoky flavor. Peter Martin smokes the malted grain for two days over wet beech wood that originates at Garry and Kelly Brown’s farm, a process that gives the beer a smooth and mild smoky flavor while maintaining a slight sweetness, medium body, and clean finish.

Twenty-six percent of the Rauch’s grain bill is composed of beech-smoked barley malt, an ingredient made famous in the Bavarian town of Bamberg. She has the nose of cured meat, and the brew pairs perfectly with cheese, olives, and fresh bread. A dark amber brew, the flavor is truly unique to its color. The Rauch is cans with black tabs.

Rauchbier Fastenbier

The Original Schlenkerla Lentbeer is an unfiltered smokebeer, brewed according to the Bavarian Purity Law of 1516. Bottom-fermenting yeast gives the reddish brown lentbeer a natural cloudiness. Its smokey aroma is already noticeable in the smell, combined with a fine hoppy note. In the drink the fullbodied, highly drinkable lentbeer shows its strong malty flavour, rounded up with the smokey taste and a light bitterness. Due to the nourishing yeast, the Original Schlenkerla Lentbeer has the "Brotzeit already included" (German word for afternoon snack).

Rauchstack is a smooth, full-bodied smoked ale. The distinctive smoked character, courtesy of wood-fire kilned malts in the recipe, is balanced by rich, malty sweetness. Our friend Thomas at Weyermann Malts in Bamberg, Germany custom-designed the malt profile for this recipe (over breakfast no less!), and we brewed it in tribute to our close ties with them. HISTORY & STYLE Rauchbier is a beer style originating in the region of Franconia in Germany. The unique feature of this style is that the malt has been kilned over wood fire (typically beechwood). As a result of this process the malt imparts a pungent smoky character to the beer. TASTING NOTES The first impression of Rauchstack is undoubtedly its rich, smoky aroma. The body is luscious and the flavour echoes the smoky scent, giving the sense of a beer that could almost be a meal. The smoke is balanced by malty sweetness. The finish is clean, with some lingering whiffs of smoke.

RAW was originally commissioned to be the house beers for Real Ale Weston and the Royal Artillery Arms, both now sadly closed. The landlord and drinkers were already huge fans of Merlin’s Magic, but wanted something a bit hoppier. They were also intrigued with our unfined natural approach to beer. So we trialled three different unfined, dry-hopped versions of Merlin’s Magic. Layering the herbal dry-hopped characteristics over the rich malt base, and padding it out with body and flavour enhancing yeast really transformed the already sessionable Merlin’s Magic into something even more enjoyable. Everyone really loves the result. Consequently we make it available to select pubs whose customers appreciate its natural nature and enhanced flavours. If you are lucky enough to find some you will be rewarded with a truly remarkable best bitter, and perhaps begin to understand that beer is often the better for having some opacity.

Raw Creation

Raw Creation is a collaborative effort between Dogfish Head and D.C.-based Goûter, producer of raw, organic tonics and cleanses. For this beer we decided to go with a Midas Touch recipe base sans saffron (same grain bill, honey, and white Muscat grape juice) combined with Goûter’s Hydrate Tonic, made from Lemon, Cayenne Pepper, Coconut Nectar, Cocumber, and Lemongrass. The result is a refreshingly acidic and earthy brew with light honey notes and combined with cooling cucumber and woody finish. Despite the close relationship to Midas in recipe, the result is amazingly different with the addition of the Tonic.

A raspberry tart beer. Loads of raspberry puree added to a unique brew. During the brewing process, half of the batch was lightly soured while the other was brewed normally. This lends a slight tart note that complements the raspberry. Notes of raspberry and slight wheat character in the nose. The flavor reflects the nose and finishes a bit bready. Notable Ingredients: Grist: Pale Malt: Base Malt Wheat malt: Adds a wheat character, slightly bready, and aides in head retention. Hops: East Kent Goldings: Used as bittering hops. The raspberry overcomes most of the bitterness in the brew. Other: Lactobacillus: A kegging sour technique was used to promote growth ofLactobacillus to add a nice tart flavor.
