Revival

Revival Stout is brewed in the British and Irish tradition of oyster stouts. Made with three thousand Chesapeake Bay oysters from War Shore Oyster Company, the oyster shells are steeped in the brewing water to add mineral content and then the oyster meat is added during the boil. The oysters add a subtle whiff of a sea breeze, a slight briny character and a smooth textural element to the beer. Five percent of the sales of Revival Stout is donated to the Oyster Recovery Partnership to support their efforts to revive the oyster population in the Chesapeake Bay.

For a beer relatively low in alcohol it has a very full flavour and drinks well above its strength, earning it a multitude of awards and setting the standard for the style. A modern classic!

In the tradition of Trappist monks of Belgium we have brewed a Dubbel for our holiday brew. Dubbels are sweet brown ales with a spicy finish. We brewed this beer with Pilsner and Caramel Malts, as well as dark Candi Sugar. Candi Sugar is a traditional ingredient in Belgian beers that adds complexity to the sweet finish. Fresh yeast was added to this beer before packaging for further conditioning in the bottle and keg. Bottle conditioned beers will improve with age as the beer continues to ferment in the bottle. On the hot side, Rhizing Bines will go through Dogfish’s signature continual-hopping process with floral and citrusy Bravo hops. On the cold side, it will be dry-hopped with an experimental varietal so new it doesn’t yet have a name, just a number: Hop 644. A component of Sierra Nevada’s aroma-boosting Torpedo system will make a pit-stop in Delaware for dry-hopping duty before it heads to Sierra’s new North Carolina brewery. To celebrate Sierra Nevada planting East Coast roots, Dogfish Head tracked down a Carolina heirloom wheat grown and milled at Anson Mills. Rhode Island Blueberry Beer

Our “other” year round brew is a Kolsh style beer made with real Rhode Island Blueberries. Fermented at colder temperatures, but using our American Ale yeast strain eliminates conflicting fruity esters other fruit beers might posses. We feel that the addition of juice from real, hand pressed Rhode Island Blueberries shouldn’t have to compete with the natural fruit background of the yeast. Pale Malt makes up the base of the grist bill, but this brew also calls for a large amount of malted wheat, an ingredient that lends a soft mouthfeel to the beer. Further there is enough caramalt to ensure a sweetness everyone will enjoy. Hops are chosen to compliment and balance the brew as it is bittered with a small amount of Magnum and flavored with English Pilgrim to lightly accent this truly unique ale.
