Breakside Pilsner

We always wanted to make a year-round German-style Pilsner. Both because it tastes great and it’s a favorite of ours. We import bagged German Pilsner malt and manually add 3,300 pounds to each batch because we believe that’s what it takes to make a great German pilsner. We source all Hallertau Hersbrucker hops, which we prize for their mix of floral and “Noble” notes. Then we wait. This beer is unfiltered, so we rely on natural lagering techniques (i.e. long times and cold temperatures) to get this beer as bright as sunshine. Liquid sunshine - our traditional German lager.

Little Yuchi Pale Ale

The name may say Little, but the flavor is big. Little Yuchi (uchee) creek is a smaller creek located near Big Yuchi Creek in east central Alabama. this creek was inhabitated by a local group of native American indians prior to them being forced to move west and eventually settle in northeastern Oklahoma. This 6.5% ABV American Pale Ale is generously hopped with Centennial, Cascade, Northern Brewer, Chinook and Columbus hops and is balanced with just enough Crystal and Vienna malt to make for a nice hoppy beer with a backbone.

Beer is made by creating a liquid rich with fermentable material. This ‘wort’ is moved to a fermentation vessel where yeast, a living organism, is added. Yeast swims around the fermenter gobbling up the soluble sugar and converting that energy into alcohol. Imagine the feeding frenzy of millions of tiny yeast cells eating their way around a big fermenter. It’s a volatile and active environment. During this time, the beer is literally alive. Just prior to packaging, we add a little yeast to the clear beer for a secondary fermentation. This helps to add carbonation, remove oxygen, and prolong shelf life. When we named the beer “Live” we wanted the label to have the feeling of live music. Our art department came up with the idea of using ticket stubs. Those shown here are from our staff at the brewery and our friends from around the country. Look closely– we may have rocked out at some of the same shows!
