Lux Mundi

This “father’s beer” has a beautiful aroma of ripe fruits with hints of citrus, perfumy floral hops, and a faint biscuity malt. A light to medium bodied ale with bright fruity flavors up front; its impression of sweetness is balanced by a deliciously clean and dry finish. This is traditionally the monk’s every day drinking ale...and may soon becomes yours! An easy drinking ale.

Lyric Ale

The beautiful music of Orpheus had power over the living, could move inanimate objects, and even hold sway over the gods. Lyric Ale is an ode to this profound beauty, which guides everything we do. We use a blend of hops from three continents and our house saison yeast to strike this harmonic balance of fruit and spice.

L’Ultima Luna

The Last Moon is the beer that I designed to celebrate the birth of my first son, Matthew. Remember that during the months of waiting I thought to much beer that I devoted, I wanted to be deep, complex, evocative and that you could devote a long ageing. I decided to use used barrels of Amarone (one of my first loves in the oenological field), but filled only for 2/3 of their volume, so as to promote the beer oxidation with air (a tribute to my past in Andalusia, oxidized wines of a land where I left a piece of heart). The beer (if you can still call) was supposed to originally aged 9 months, but with the experience I realized that the minimum ageing for this beer is 18 months. On the label there are quotes from Dali and Saint-Exupéry, the image of the child raising the sea surrealisticamente is a clear reference to Matthew. What fascinates me in this beer is the exceptional complexity of the tertiary aromas (leather, cheese rind, madeira, wood, toasted almonds) data from oxidation, one thing I like to do is leave open bottles and berle after about 3 months to raise the level of enjoyment.

Machete

This beer has now gathered many followers, for his lack of scruples and violence that exudes SIP by SIP. No need to ask for mercy, there is no place to hide: wherever you are you will Machete. After watching the trailer for the film, already 4 years before it came out, I decided immediately that I had to devote a beer at him. Not just any beer, a beer could hold the weight of a name so uncomfortable: a Double IPA. I've always been fascinated by the Double (or Imperial) IPA, those done well and with all good faith. I'm not easy, beers the risk of obtaining "mappazze" imbevibili is always around the corner. We must limit the caramel, get a good dry and prevent the higher alcohols from mixing up their ideas. Especially you have to hop to emerge firmly, powerful and imperious, must triumph over all. The recipe for Machete has undergone several evolutions over the years, now no longer touched because if the change back to suffer the risk of outright rebellion by the people of his devotees. The amazing thing about this is that the beer kegs go away at the speed of light at any time of year.

Machination

As complex as its name implies. This bi-annual specialty strong ale employs a wide variety of fragrant hops to augment its robust grain bill, giving it a bold aroma as well as a heavy, yet not overwhelming body. The nose brings grapefruits, papayas, juniper berries, maple sugar, and a hint of spice. The tase that follows is delicately sweet, followed by a mild citrus zest, completed by a smooth, dry finish that lingers pleasantly long after the glass is empty.

Mackinac Pale Ale

Derived from the traditional English style bitter, this is a classic American pale ale. A three malt blend provides a medium bodied ale that is balanced with Northern Brewer and Cascade hops from Washington’s Yakima Valley, giving it a distinctive hop bitterness and aroma. The result is a light-colored brew, firm in both malt and hop presence. The term "pale" was derived due to the beer’s pale color compared to porters and stouts of the 18th Century.

Mad Meg

“Provision Ale” is a rough translation of the French term “bière de provision“, which was sometimes used to describe special beers that were suitable for extended storage and aging. Brewed from relatively simple, straightforward ingredients, Mad Meg is golden colored and quite strong, at over 9% ABV. Its palate intertwines delicate farmhouse esters with earthy, spicy hops and clean malt flavors. The name “Mad Meg”, refers to a peasant woman from Flemish folklore, also known as “Dulle Griet” or “Dull Gret”, who leads an army of women to pillage hell. She’s famously depicted in Pieter Brueghel the Elder’s 1562 painting by the same name.

Latin for 'Great work'. It is also an alchemical method in the creation of the Philosopher's stone, or the ultimate wisdom. Maibock

Maibock translated from German means the bock beer of May. Gordon Biersch Maibock achieves its rich malty flavor from dark roasted caramel malt, and lots of it. Originally brewed in the 14th century in the town of Einbeck, Germany, it quickly became a favorite style in Bavaria. One of the Bavarian brewers actually enticed a brewer from the North to move to Bavaria where the style was popularized. Maibock is a great beer to accompany robust flavors. The rich flavor from the dark-roasted caramel malt complements the moderate level of bitterness to create a perfect balance. Maibock is available seasonally from February through April.

Maine's Best IPA is a unique blend of American hops with a British body utilizing English 2-Row Pale malts. This IPA starts with a hoppy aroma and taste; ending with a sweet finish. Plenty of Munich and caramalts are used to give the beer that golden hue. There are fifty-six pounds of Cascade Hops used in each 50 barrel batch that is brewed! Then we finish the beer with Willamette & Warrior Hops, (Warrior is a high-alpha acid variety of hops).
