The vivid rose hue of this imperial Pale Ale comes from a combination of Munich and Caramel malts and a touch of red rice from Louisiana, birthplace of musician and collaborator Julianna Barwick (read all about that collaboration here!). Julianna, who builds ecstatic choirs by looping and layering her voice, helped choose the ingredients for Rosabi and visited coastal Delaware to brew a test batch. Citrusy Simcoe and Centennial feed Julianna’s love of hops, and the star of the show is her go-to ingredient: wasabi. What’s hoppy? … Wasabi. The Japanese root adds bittering and herbal notes similar to hops, with its subtle heat creeping in after the kick of carbonation.

This is an experimental American-style IPA. It’s named after Peter Roscoe, Astoria city councilor, and advocate of locally-grown wild rice. Peter is working with Clatsop County farmers to utilize untapped farmland for rice, as he believes the water-loving rice would thrive in our rainy climate. The beer consists of 5% Oregon Jewell Wild Rice, which provides a dry, roasted nut flavor. We used Cascade and Citra Hops to add a fruity, orange component. A perfect, crisp IPA.

Rosé de Cambrinus

Two barrels of our famously sour Kriek (cherry) du Cambridge take a jump to the left (and then a step to the right) with a significant addition of raspberries to each barrel, resulting in a new beer that’s no longer a Kriek, not quite a Framboise. We dub thee Rosé de Cambrinus in homage to the first lambic beer ever tasted by our Brewmaster (and still a favorite), Cantillon Brouwerij’s acclaimed Rosé de Gambrinus. Our Rosé presents itself with an artful blend of concentrated fruit flavor and aroma, and plenty of earthy funk in the finish. Both cherry and raspberry stand out, with enough sweetness to balance the significant but smooth acidity leading to a very dry finish. With its bright red hue and wispy foam, it opens up to express complex notes of stone fruits, toast and oak, a hint of almonds, and a wild-floral, tart finish while raspberry notes linger on the palate. A very limited release (less than 100 gallons will be available), Rosé de Cambrinus is sure to resonate with fans of traditional Belgian lambics and other sour beer styles.

Rosé de Gambrinus

Kriek certainly already existed in the beginning of the 19th century. It is, however, more difficult to determine when the Framboise-Lambic appeared in the Brussels pubs. Anyway, the beer certainly was available in the beginning of the 20th century. Paul Cantillon mentions a higher number of bottles of Framboise than of Kriek in his inventory for 1909-1910. During the First World War, the fruit beers disappear from the inventory. From 1922 on, the Kriek will be produced again on a regular basis. As for the Framboise, it was produced for a short time in the thirties and disappeared from the inventory afterwards. In 1973, a friend of mine, Willy Gigounon, delivered 150 kgs of raspberries at the brewery. The production of raspberry beers started again 40 years later. I was preparing a barrel of raspberry beer. The beer coming out of the small hole in the middle of the stave was marvelous. "It has the colour of onion skin", said a voice behind me. It was Raymond Coumans. He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus. The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.
