A romantic love story in a shade of pink between raspberries and our Duchessa. A passionate adventure made of spontaneous and controlled fermentation, passion, time. An extraordinary plot, to be sipped until the last drop. Rubus idaeus - raspberry – is the main character, our spelt beer Duchessa is the starting point. 100 grams of fresh fruit are added for every liter of beer; they start a wild fermentation that gives the beer a unique profile with a marked sharpness, well balanced by the berries’ smell. It perfectly substitutes a pink sparkling wine as an aperitif.

Returning for Christmas... A Wild Beer & Beavertown collaboration. Raspberries, Long pepper, Wild Yeast & 9 Grains We collaborate to learn, experiment and enjoy. With this beer we have explored new ideas, techniques, ingredients, combinations and processes. The first Wild Beer Co / Beavertown collaboration took place in August 2013 and is still slowly ageing away at Beavertown Towers. This is the return collaboration, the evolution of ideas and the beer that answers the question... Have you ever wondered what a ton of raspberries might taste like in a beer? This time the beer has been brewed at Wild Beer HQ. We have used the same 9 grains that we used in our first collaboration; barley, wheat, oats, corn, rice, rye, buckwheat, quinoa & spelt. Long Pepper, a beautiful floral pepper seasons the beer wonderfully to compliment the huge raspberry fruitiness and to help the fermentation and tart flavours along we have added an oak barrel full of our spontaneously fermented sour beer. A truly special beer, delightfully tart and fruity, a creation that only comes about through the spirit of collaboration.

Full malty mouthfeel that is completely destroyed by over hopping with gobs of American hop goodness. A bit of a paradox ... Rich caramel toffee flavors layered with a hefty dose of Centennial hops. Ahh, lovely Ruby! We've met this red headed stunner before, and while good sense tells us she's out of our league and will leave us a crumpled pile of heartbreak if she deigns to meet our gaze, we can't resist. You know her, she's the one with the hearty laugh, the big green eyes, and a vintage vinyl record collection you could only dream of.

A true wild fermentation done in French Oak Cabernet barrels with sour Colorado grown Montmorency Cherries, for a tart and delicious unexpected twist on cider.

A light wheat ale infused with an abundance of Oregon Raspberries for an intense yet harmonious union of fruit and beer. Gold medal winner - Great American Beer Festival 2012

A deep reddish-amber brew that is characterized by the savory toasted flavors of Munich malt. German varieties of hops are used in the brewing process which lends a European flare that is much like the "Altbier" style of Dusseldorf. Having a medium body and a firm, crisp finish gives the perception of dryness, leaving the drinker quenched and ready to quaff another.

Delicious grapefruit infused pale ale, with a nice citrus flavor.

Shiner Ruby Redbird is brewed with genuine Texas Rio Red Grapefruit, the signature sweet citrus of the Rio Grande Valley, and ginger. This lager beer features grapefruit tartness and finishes with a ’lil kick of ginger. With Texas Ruby Red Grapefruit and Ginger, Shiner Ruby Redbird is a crisp and refreshing summer beer.

A complex red velvety smooth ale designed with 4 specialty malts and 2 varieties of hops. A superb pub ale that compliments food and is a local favourite.

The story: Ska and Camden Town. It was always going to happen, wasn’t it? We were destined to get it on. And what happened when we did hook up (it happened in the back of a van in downtown San Diego…). We drank beer, then drank some more beer, and then drank some more beer. Then someone said: Hey, imagine what would happen if Hells Lager and Modus Hoperandi combined into one super beer? That’d be awesome, man. Let’s do it. Let’s brew it! Let’s brew a Rude Boy lager hopped like a motherfucking IPA! The taste: Just about the most handsome beer you’ll find, it’s bold gold with a fat foam on top. The aroma is insane yet delicate, all citrus fruits and resinous hops. Smooth bodied, there’s some sweet malt in the background before the ripping bitterness powers through and finishes dry, meaning you gotta get another gulp. We love it!

Rude Jester is an American-Style IPA with crisp lingering bitterness and an assertive hop flavor and aroma. A subtle, yet simple malt profile supports the hops up front, and then steps aside to allow the hops to steal the attention of all those partaking. Rude Jester combines the strong citrus qualities of the Centennial hop with tropical notes from the Mosaic hop to create a unique fruity hop flavor and a pungent, intoxicating hop aroma. Rude Jester IPA is no jest weighing in at 6.5% ABV and 72 IBUs, but it would just be Rude not to have another.
