Merry Monks’ is a Belgian-style Tripel. Pilsner malt combined with an abbey yeast strain yields a remarkable and complex flavor packed with notes of spice, banana and pear. Nicely balanced, with a moderate to dry finish. Merry Monks is bottle conditioned which imparts a special effervescence to the beer and a creamier carbonation. 9.3% ABV. The ongoing fermentation inside the bottle will change the character of the beer as it ages and you’ll find it becomes dryer with age. You may want to lay down a few bottles for future evaluation. We suggest storing at cellar temperatures – around 55°F – and away from light. This 9.3% brew is available year-round. Keep your eye out for Merry Monks’ Ale in 25 oz. cork-and-cage champagne bottles for an exceptional experience!

Our interpretation of the American red ale style. Unlike most other examples of the style, ours is a dark amber coming from the use of 6 different malts. A blend of 3 different hops from 4 additions gives our Mesabi Red a full hop character.

We brew our Michelob Honey Lager with European aromatic hops and toasted caramel barley malt for a balanced taste. What makes this beer really special, however, is the addition of a touch of natural wildflower honey. It all adds up to a just slightly sweet and uniquely soft beer.

This festive occasion beer follows the traditions of one of the oldest English brewing styles from the 16th Century. The blend of malts provides a caramel and nut flavor with a deep coppery brown color with medium body, which is balanced with traditional English Kent Goldings hops. The result is lighter in color and flavor than our porter and stout, yet provides plenty of rich nutty and toasted malt flavors.

This light bodied brown ale has a muted toffee flavor and a smooth finish that satisfies the palate with spicy foods, wings and Mexican fare.

We brew this smooth dark ale with palm sugar for an exquisite nutty flavor and pleasant sweet finish. Chocolate, Crystal and Pale malts combine with Columbus and Tettnanger hops in a balanced brew which pairs well with spicy and savory dishes.

This imperial black rye IPA has both a dark malt and high hop flavor: why have one or the other when you can have both? The rich malt flavor is complimented by a distinct yet balanced hop presence. Aromas and flavors of citrusy hops merge with a mild chocolate-like malt character.

Midnight Ryder – a hat tip to Bischoff’s son, Elliott Ryder – is cloaked in mystery and full of surprises. A style of disputed origins and merit, American Black Ale puts a distinctly American twist on the India Pale Ale with five varieties of malt that give this dark beer a medium body and a complex array of flavors including caramel, chocolate and a smidgen of roast. Sealing the deal are six varieties of American-grownhops added throughout the 90-minute boil. This beer offers a resinous and piney character with just enough citrus to bring balance at the finish line.
