With notes of fig, apricot and lemon, Tamarind is an ingredient our brewmaster has wanted to work with for years. So the stars have never been more aligned than when our cellarman Jake Beamer threw a tamarind-infused English brown ale into the ring during last year’s Brewhouse Rarities pitch session.
Beamer stumbled upon tamarind beverages while aimlessly scanning the shelves of an international grocery for unique and interesting ingredients (as brewers are apt to do). For the uninitiated, the tamarind tree, which grows in tropical regions, produces a pod-like fruit with large seeds and a sticky pulp. These guys have an intensely tart flavor and are commonly used to make thirst-quenching beverages similar to lemonade.
Beamer initially deliberated on the beer style that would pair well with this unique ingredient before settling on an English brown ale. The idea was to use a medium malt body as well as fruity esters from the British yeast strain and a hint of earthy Goldings hops. The tamarind flavor is not in the foreground of this beer; it’s subtle and perfectly intermingles with the cast of other flavors.

This ain’t no just-add-juice approach. This one is for adults. We use bountiful whole tangerine purée, which brings pithy, crisp bitterness to the citrus flavor. In addition to the complexities of the tangerine — the likes of which you can only get by using the whole fruit — we judiciously employ just a hint of whole pineapple for a backnote (you’d likely not even pick it out of the mix if we didn’t tell you it was there). We’re not looking for a sweet concoction to appease the “I want my beer to taste like fruit juice” crowd. This is Stone. We like our IPAs to taste like IPAs. Big, bold and not for kids.

Tango is a big, bold, Belgian-style dark ale brewed with 1,200 pounds of cherries!
Tango pours a beautiful ruby color with a nice fluffy head, offering a very complex aroma of cherries and other dark fruits. The strong 750 ml glass bottle finished with a cork and cage allows the very robust bottle-conditioning responsible for Tango’s effervescence. Dark fruit flavors join the cherries to match up with the strong malt bill with the Belgian yeast adding its 2 cents along the way.
Tango weighs in at 10.6% ABV and was brewed using a base of Pilsener Malt with Honey Malt, Special B, Aromatic Malt and a touch of Chocolate Malt. Apollo hops balance all that sweetness to 35 IBU.

This is the twisted big brother of our famous pale ale. Tankenstein started its tortured existence as cask beer made at our Toronto pub brewery and quickly took on a life of its own. Based on our Tankhouse Ale, this is simply more of everything–more body, more alcohol and way, way more hops. Like the original casks of Tankenstein it is dry-hopped with a horrendous amount of US-grown Cascade hops to give this beer a very perfumey “grapefruit” and “pine resin” aroma and high bitterness but with the body and rich malt character to back it up and give it a particularly beguiling balance. It’s a beast, but it’s OUR beast…and we think it’s beautiful.
Originating as a cask-only version of our Tankhouse Ale, Tankenstein is a dry-hopped IPA with full body and matching bitterness. It is a perfectly balanced ale with caramel and biscuit malts complementing the dryness of US grown bittering hops but with a massive over-lay of American Cascade hops being added to the tank during ageing to “dry-hop” the beer and give it a wonderful perfumey character. Grapefruit and piney resinous tones are the main contribution of the Cascades and make this a truly classic American-style IPA. It’s ALIVE!!!!!!
