The Weiss

“The Weiss”, as it would have been called in the old beer cellars of Berlin, is our take on the Berliner Weisse style. It is a light colored, tart, and refreshing wheat ale. We prefer it in the traditional style - not too sour - so that it can be drank in the traditional manner - in giant cylindrical bowls over the course of hours. Try a pint of each: ‘green’ with Woodruff syrup or ‘red’ with Raspberry.

Barrel Aged Imperial Coffee Stout. Legend holds that a team of Russian engineers purportedly led by an individual named "Mr. Azzacov" in an unnamed place in Siberia had drilled a hole that was 9 miles (14 km) deep before breaking through to a cavity. Intrigued by this unexpected discovery, they lowered sensory equipment into the well. The temperature deep within was 2,000 °F (1,090 °C) — heat from a chamber of fire from which (purportedly) the tormented screams of the damned could be heard.

The Woodsman

The Woodsman was brewed in celebration of our 3rd Anniversary. Inspired by the Tin Woodsman, this beer is a blend of two different Imperial Stouts, one aged in Bourbon barrels and the other fermented in stainless steel. The Woodsman pours opaque black with a thick, creamy mouthfeel. Chocolate and coffee dominate the aroma accompanied by hints of Bourbon and oak.

This beer is based on chemical analysis of pottery fragments found in Honduras which revealed the earliest known alcoholic chocolate drink used by early civilizations to toast special occasions. The discovery of this beverage pushed back the earliest use of cocoa for human consumption more than 500 years to 1200 BC. As per the analysis, Dogfish Heads Theobroma (translated into 'food of the gods') is brewed with Aztec cocoa powder and cocoa nibs (from our friends at Askinosie Chocolate), honey, chilies, and annatto (fragrant tree seeds). It's light in color - not what you expect with your typical chocolate beer. Not that you'd be surpised that we'd do something unexpected with this beer! This beer is part of our Ancient Ales series - along with Midas Touch, Chateau Jiahu, and other - step back in time and enjoy some Theobroma.
