This brew comes from the mind of our friend Ed: brewer, beer lover, Grateful Dead fan, and eventual zombie. It uses a ridiculous number of malts and American whole cone hops. Ghost Chiles were added both in the kettle and post-fermentation.

Dearly beloved, fear not. Though he be the blackest of brews, our Undertaker is a blithe spirit. He revels in spicy rye and wheat, peppery French yeast and soulful, dark fruit. For he knows that when his brief luscious life is laid to rest, the next will be just as good.

Wanderlust has a fresh aroma, reminiscent of peach and tropical fruit, and a juicy flavor highlighted by peach, mango and pine. The finish is crisp, dry, with a hint of sweet cereal grains, making it the perfect beer with which to celebrate the arrival of warmer weather. Wanderlust was first served at the brewery in April 2014, and will be brewed in the spring and summertime annually.

Firm bitterness and intense dry hopped aroma come from loads of Citra and Cascade hops. Crips and dry with a slight sweet finish are the perfect balance for this American classic.

For this experimental tropical IPA, we decided to go all out. We aged it on over 25 pounds of organic toasted coconut. We also added nearly a barrel of unfiltered pineapple juice freshly juiced by Good To Go Mobile Juice Truck. This exotic brew exhibits aromas of toasted coconut, pineapples, mangoes and passion fruit flowers. Each sips starts sweet and finishes with a long finishing hop bitterness. It's like Hawaii in a pint glass. Kāmau kī`aha!

It’s Hells Lager that’s hazy thanks to being unfiltered. The yeast which is left in leads to a smoother and more full-bodied lager. Taste: Hazy blonde and creamy white foam, it’s smooth with a satisfying depth of hop flavour We always have Unfiltered Hells Lager on at the Brewery Bar – the regular version of Hells passes through a filter before we package it and this removes any yeast still left in the beer, whereas Unfiltered Hells Lager is taken straight from the tank. Where Hells is sharp and clean, the Unfiltered version is smoother, fuller-bodied and the yeast grips hold of more hop flavour.

As we continue to push the outer boundaries of stylistic freedom, our brew team continue to swing the sword with our own version of a Japanese Emperor’s Stout. Hand picking 10 specialty malts, the finest flaked oats, golden wheat, and Japanese rice give the body of this beer a silky, smooth, and clean mouth feel. To age this rare beer down, they found a cache of barrels from a small batch, award winning bourbon distillery out of Washington. These heavy toasted rare American bourbon barrels impart hints of light vanilla, coconut, and fresh oak. The dark bourbon notes add warm caramel, ripe tobacco and a soothing boozy finish to this velvety Stout.

After “A” comes “U” The “U” stands for “Ungespundet”, which means unfiltered and outrageously good. Simply pronounced, “Ahh Ooo”, like the two vowels, means you would like a U beer. No language skills required, and you finally have a great beer that doesn’t take a long time to order. What comes to your table, if one orders a U? You’ll get an extraordinary, yeast-turbid specialty beer with a full-bodied smooth-malt character. Pleasantly tart and lightly carbonated, it is a beer that goes just as well with a good meal as it does with a relaxing evening after work. Did somebody say, “cult beer”? Yeah, why not. That’s fine with us. Sure, you could always say “one” U. But experience has taught us that that’s rarely the case.
