– Iced Barley Wine – This is yet another off the wall idea we decided to put into action. We make our American Barley Wine (Paul Bunyan) and let it finish fermenting like normal. Then we wait for a particularly frigid evening and move the entire one barrel fermenter outside overnight. This basically freezes a portion of the water in the beer and when kegging the beer the following morning this water is left behind. The result is a more concentrated version of our already rather powerful beer. This is the king of all giants, and certainly the most dangerous.
