Highland Park has a beer we are totally in love with called Timbo Pils that they call a “West Coast Pils”. In the spirit of our two GABF medals we decided to blend the two styles into what we are calling a “West Coast Keller”. Kellerbier being an old German style that is the “cellar” beer – or the unfiltered version of the more classically know styles such as pilsner or helles. We’ve taken a malt base that is close to that of Casa Azul and fermented with dried lager yeast that Bob has been super successful with on Timbo Pils. Hop schedule in the kettle looks more like a German lager, but the dry hop is where we get all that West Coast steez.

The garage is a place where we like to tinker, iterate and create. This beer is no different. it's a refreshing tart golden ale that we decided to keep tinkering with. The acidity of the beer is countered by bright fruit and floral notes contributed by the use of Mosaic hops.

This wildly delicious send-up to the classic Belgian Pale is a testament to why the style is so universally beloved. Sessionable yet stunningly complex, the Belgian yeast absolutely sings over a subtle, herbal hop bill before wrapping up in a clean, dry finish. The moderate ABV is a serious bonus, because you're probably going to want another one.

Named for the constant temperature of cool, clear first magnitude springs, 72 Pale Ale is a beer for the hop lover, featuring a prominent citrus and floral hop aroma paired with a bready malt note in the background. It has an enticing, light copper color and is balanced, but leans decidedly towards the hops in its flavor and aroma. This beer is medium-bodied with a semi-dry finish that leaves a pleasant herbal/spicy aftertaste. 72 is dry hopped with a trio of Cascade, Centennial, and Chinook varieties.

Benedict Cumberbatch is our Gose with Cucumbers added. We’re talkin 100lbs of Freshly chopped & juiced Cucumbers added directly to our Gose at the end of primary fermentation. The result is a refreshing beer that screams summer with a massive aroma of fresh Cucumbers backed up by hints of lemon zest and a slighty salty character from the addition of Jacobsen’s Sea Salt.
