It’s always harder when you’re the first in line. Whether it’s stomping down the snow while out snowshoeing, blazing a hiking trail through dense brush or building a road to an otherwise inaccessible place. We’re grateful for the trailbreakers who have paved the roads and marked the paths to our favorite places in Cook County. And this cheer is for them and to those who are here now breaking their own trails. Our Trailbreaker Belgian Wheat is a refreshing and effervescent beer and is the perfect end to a day of breaking trail or following one of the many left behind for us to enjoy.

Dubbel Trippel hybrid

It’s a simple universal fact that ninjas are badass. You know what else is badass? Revision beer. Our buddies at Shoe Tree Brewing kicked around ideas with us to develop this tasty, tantalizing, karate chop in your freaking mouth. Kaleidoscopic nunchuck hits to the dome with Citra, Galaxy, Mosaic and Amarillo. Stealthily slaying your taste buds, one sip at a time.

Traditionally brewed to complement the brisk temperatures of Scotland, the Scottish strong ale is packed full of malt, making its consumption effortless. The residual sweetness is derived from its extremely low IBU’s, and we at AIBC like to refer to it as the antithesis to the IPA.

A brand new Double Dry-Hopped Double IPA. DANGER DANGER is a hazy and thick with fruity, hoppy flavor. 8.8% Alc. by vol. Hopped with Hull Melon and Nugget followed by double dryhopping with virtually every hop we use. I.e. Ella, Simcoe, Equinox, Mosaic, and Citra.

A classic IPA and nod to our rich British brewing history. Bold & Characterful. ‘Black Sheep IPA’ has been brewed in homage to the original, highly-hopped IPAs that were exported to British troops stationed in British India, as it was previously known, more than 200 years ago. This is an unapologetic brew, packing heaps of hop and bitterness. This India Pale Ale is true to the classic style, using a plethora of English hops including Progress and Goldings to pack it with a distinctly characterful flavour profile. A deep and potent, sweet malt base aligns with the bitterness to leave a superbly balanced ale.

Ancho and Peach Belgian Pale- Peach tea and ancho peppers combine for a stone fruit forward aroma and a slight spice tingle on the finish in this light belgian-style ale.

A contradiction in term, black IPA’s are a clash of styles old and new. Modern tangy citrus hops merge with roasted chocolate malts for a truly classic beer. Black as night, but close your eyes and you're drinking a zesty IPA. Controversial? Of course not, just a wonderful beer!

American India Pale Ale brewed with Pale, Caramel, and Vienna malts. Huge hop character is developed with kettle additions of Columbus, Chinook, Centennial and Amarillo while two unique dry hop additions include Equinox, Citra, and Columbus.

Brewed at De Proefbrouwerij for Caulier Developpement Belgian top-fermented beer, refermented in the bottle; Sugar Free. Ingredients Water, malt (malted barley, malted wheat), hops, yeast, spices.
