Extra pale malt is blended with Munich, Vienna and a splash of Crystal malt to produce a light golden colour. Columbus hops are used for bittering and Simcoe, Equinox, Cascade and Mosaic are added progressively throughout the boil with a good wedge added at the hop-stand phase. The hops add fruit, floral notes typical of a North American style pale ale. Clean US05 yeast is used to allow the hops to shine through.

This Blonde Ale is a new recipe and uses a new yeast, so it's a true Prototype for us. Sweet malt tempered with light bitterness; floral and spicy notes on the nose, and a balanced toasty complexity.

Generous amount of dark specialty malts play opposite an abundance of Cascade, Citra and Chinook hops, resulting in an IPA with a rich red hue, floral nose and a mouthful of hoppy love.

Welcome, our first selection in the Coastal Life Series from Biloxi Brewing Company stable of beers, Salty Dog!! Salty Dog is a Gose (pronounced Goes-Uh), and is an ancient German style unfiltered wheat beer with sea salt and coriander. Sea Salt is added to mimic the salinity of the natural spring waters found in the region where this style originates, which is adjacent to salt mines, and coriander was used to offset that saltiness in the beer. Lightly hopped, just enough to offset the mild sweetness. This will be a limited release, the first, in what we are calling the Coastal Life Series! NOT a seasonal, but a limited release, so when you see it on your store shelves, buy it, because once it’s gone, you won’t see it again until the summer. Look for more varieties to be coming out later in the Coastal Life Series.

An American Wheat Ale brewed with strawberries. This beer is soft and sweet with a subtle tartness. We brewed this beer to be enjoyed in the sun with friends.

After playing with a number of different recipes, NOLA took their time perfecting a blend of Citra, Mosaic, Grungeist, Calypso and Ekuanot hops for a fruity and juicy aroma that finishes all hop. Late hop additions lead to more flavor and less IBUs and coming in at 6% keep Syncopation very drinkable.

In remembrance of and in tribute to our friend Dan Rosen of Mazurt Brewing Company, To Dan! is a flavorful, juicy, big IPA featuring fresh coconut-- it's like no other hoppy beer.

Our Vanilla Viper porter is made with dark malts like marris otter and chocolate malts, that gives this porter hints of coffee and chocolate. Fresh vanilla Beans and actual vanilla wafers give this a great hint of sweet.

Pale Ale brewed with 50% Appalachian Wheat from Riverbend Malt House in Asheville, NC. Hopped with Citra, Amarillo, Palisade, Centennial and El Dorado.

Dark sourdough bread in aroma, mild roast, Vitamalz. Caramels, sourish, yet dry and soggy bready malts, good bitterness - watery mid. Quite filling and bear-body enhancing.
