Hoppy Sour: Amarillo is a celebration of the fruit flavors that lie within the pernicious weed. We combined a brettanomyces farmhouse ale fermented in foedres with an intense IPA-style dry hop. The result is a melange of peach, pineapple and tangerine aromas and flavors that blend magically with brett’s trademark funk and minerality. This hoppy—but not bitter—sipper is a versatile complement to a broad range of dishes including sweet Belgian waffles, savory grilled halibut and Waldorf salads.

A twisted, more hop-forward interpretation of a Sticke Altbier that brings an ocean of complexity to the senses. Flavors of caramel and bread wash over your pallet from a blend of munich, caramunich and chocolate wheat malts, which are brightened up by the rolling essence of honeydew melons and strawberries from modern Huell Melon hops and the subtle floral and spice form traditional Perle hops. The light in The Temple is on. What happens next is entirely up to you.

This is our classic bourbon barrel-aged barleywine – kicked up a notch. We took Mash, already oaky, sticky and sweet, and amplified its barrel character with the addition of fresh vanilla beans. This vanilla prominence is complemented by the woody bourbon flavors and coconut notes that are imparted to the beer as part of its extensive maturation in oak bourbon barrels. Mash & Vanilla is best enjoyed fresh to experience the vanilla flavors at peak strength.

Our goal of enjoying pints of Peticolas beer in the stadium during an FC Dallas match is realized with a beer five years in the making. Despite our best efforts, Peticolas beer had previously only been available at pre-game tailgates prior to kickoff…so we took our brew to an away match. Born out of a love for soccer and FC Dallas, we present Match Day. Originally brewed in Columbus, Ohio as a collaboration effort with Land Grant Brewing, Match Day celebrates two original MLS teams and will pour in Columbus during FC Dallas’ August 26 away match versus the Columbus Crew. The Columbus brew turned out so well, we decided to brew it for our home crowd (taproom) at the behest of our great friends, the Dallas Beer Guardians. Match Day is a 5.5% American Pale Ale. This easy drinking pale ale presents big aromas of lemon and orange peel at the front thanks to Cascade, Amarillo, and Centennial hops. The aromatic and flavorful hops are backed by a light and crisp body which makes it an easy beer to stick with for a 90-minute match. Come enjoy a Match Day with us and cheer on FC Dallas. We’ll pour this limited release during home game tailgates in the parking lot of Toyota Stadium and in our Taproom.

Off the Beaten Path 1 was inspired by the classic Saisons that exude balance, grace, and innocence. Fermented with traditional Saison yeast strains in stainless steel and bottled conditioned with our proprietary mixed Saison culture. OTBP 1 dances on the palate with light nuances of pome fruit, peppercorns, herbaceous undertones, and straw.

Saison Rue is an unfiltered, bottle conditioned, Belgian/French-style farmhouse ale. This is a beer of subtlety and complexity, with malted rye, spicy, fruity yeast notes, biscuit-like malt backbone and a slight citrus hop character. With age, this beer will dry out and will become more complex with rustic notes of leather and earth from the contribution of a wild yeast strain. Being a saison, Saison Rue is ambiguous unto itself as it is a different beer when fresh and when aged.

An India Pale Ale brewed with light malts and dry hopped to create a hop forward citrus note. This four-times hopped IPA is robust and aromatic with just the right amount of bitterness.

This IPA features the flavors of the Cascade hop in an all-new way. Highlighting its signature citrus, pine and floral flavors, this IPA is an homage to the hop varietal that helped cultivate the love of bold, hop-forward beers for brewers worldwide and made our original Draught-style Pale Ale a modern beer classic.
