Huon Dark Apple Ale

“The Huon region directly south of Hobart is where Tasmania earned the reputation as the ‘Apple Isle’. But apples in a beer? Wanting acidity to ‘freshen’ the beer and increase its drinkability and capacity to cellar, we thought apples would be best applied to the strong flavors of dark ales. The result is well worth discovery. It is our ‘red wine’ of ale and we recommend it be served in a wine glass, at room temperature with the meat dishes and cheeses normally accompanying such wines. Our Huon Dark Apple Ale starts as a rich and robust dark ale fermented with brewer’s yeast. We then add up to 25% whole apple juice from Tasmania’s pristine Huon Valley (or “Apple-HQ” as we like to call it!) and re-ferment with a selected champagne yeast. Extended tank maturation pre-bottling, a third fermentation in bottle and, preferably, months of bottle-age completes a very individual ale of extremely complex character. This ale truly is a ‘uniquely Tasmanian experience’ and can be enjoyed now or will reward cellaring by developing more complexity with age.”

Ill Cru

Using the base recipe of Ill Padrino, our Belgian-style quadrupel, we fermented this beer with a blend of our house Belgian yeast strain, brettanomyces, and bacteria in our open fermenters. We then aged them in miscellaneous second use whiskey barrels for 10 months creating the "Grand Cru" version of Ill Padrino. Notes of sour cherry and plum are accentuated by subtle notes of whiskey while soft flavors of oak round out the finish of this complex beer.

This Intergalactical Imperial lager was brewed by Ben (Bridge Road Brewers, 50 Ford Street, Beechworth VIC 3747, Australia) & Urbain @ Struise, as a superb collaborative effort between both breweries and Simply Hops (Hop Pocket Lane, Paddock Wood, Tonbridge, Kent, TN12 6DQ, UK). While Ben shared his Australian Lager brewing techniques, Simply Hops procured us with Fresh Galaxy hop flowers. Only 4 ingredients were used, Vleteren water, German pilsner malt, Australian Galaxy Hops and Weihenstephan yeast. This lager not only bottom fermented, but also matured on its own bed of C02 for six months.

This is the version brewed at Crooked Stave not Hawkshead. Key Lime Tau (2π) was brewed in collaboration with Hawkshead Brewery (UK) as part of the Trans-Atlantic Rainbow Project, a series that challenges brewers to come together and brew a beer inspired by a color. In its third year, the 2015 project involved seven UK breweries, each paired with a different American brewery and randomly assigned a color. Key Lime Tau (6.3% ABV), brewed to embody the color green, is a Mixed Culture Fermentation Ale aged in Oak with Lactose, Fresh Lime Peel and Fresh Lemongrass.

Floridians now honor Ponce de Leon’s discovery every April 2nd on Pascua Florida day, a state-wide holiday that celebrates discovery, springtime and the divergent cultures that make Florida a truly singular culture. Brewed on April 2nd and inspired by our favorite Hoppy Pilsners, Pascua Pilsner boasts 100% German-malted barley and an assertive hop profile of herbal, spicy flavors conferred by Hallertauer Mittelfruh and Styrian Bobek hops in the kettle and a generous helping of Hallertauer as a dry-hop. German lager yeast helps to create a dry, crisp and pleasantly complex pilsner that’s a perfect herald for springtime in Florida.
