This is your year round favorite Black Strap Stout that’s been aged in a Bourbon Barrel, and then bottle conditioned in our big 1 liter swing-top returnable bottles. Available at the brewery as part of our FESTIVAL OF DARKNESS and lasting until it’s all gone. This is the original version that is only partially barrel aged and rrblended with fresh blackstrap.

This lightly flavored semi-sweet mead is a blend of honey and apples with a wonderful aroma and taste. There are also subtle aromas and flavors of vanilla, spice, and chickory.

Our version of the renaissance era sweet mead. It is made from a blend of Clover, Orange Blossom, Wild Flower, and Yopan honey in just the right proportions and aged in small French oak barrels. It has a distinctive honey and vanilla taste with lots of aroma. Collect the botlles with their ever changing artwork. Only 82 cases for 2011.

Maxwell Honey Mead has a delicate bouquet of floral beeswax with marmalade-like aromas. Refreshingly light on the palate, subtle apricot and honey characters fill the mouth, with a satisfyingly clean finish. Ideally served chilled over ice, it can also be used as a mixer (with soda water or lemonade). It is also a complement to cooking, creating delicious chicken or pork dishes.

A lustrous honey wine with a citrus-like floral aroma. The smooth buttery flavor of honey yields to a subtle, smoky earthiness and a dry refreshing finish. Decanting or allowing it to breath is recommended to release the delicate honey flavors. Serve chilled. Pairing suggestions: Smoked seafood, scallops, lobster, spicy dishes or cheese.

Hop Dam has been a long time in the works, and its design required us to build a large stainless steel hop dam for our kettle, just for this beer! It was worth all the effort, because this beer is extremely hoppy and very satisfying, using 50% more hops than our Mean Manalishi Double IPA, which was voted Best Double IPA In The World by the US Beer Tasting Championships. Hop Dam is 10% alcohol by volume, and really hoppy, with a bitterness level that is very high but refined and therefore refreshing – its like kissing a hop!! Along with all the standard hop additions, it is also mash-hopped, first-kettle-hopped, and dry-hopped!!! Hop Dam is a 100% American-style IPA, dominated by the top-rated, assertive and refined Amarillo hops, along with lots of aroma and flavor from Columbus, and Cascade, and the wonderful Summit hops – the very special dwarf hop plant picked by hand, and sought-after for its great flavor and aroma. These hops work great together, and make Hop Dam TRIPLE IPA our new standard for hoppy beers!! It will be available for only a few months, so get Hop Dam while it lasts!

Hop Project #26 was bottled 2nd week of Feb (look on the left side of the label for the bottled date). For this batch, we first wort hopped with Cascade and Nugget, and then added Amarillo and Centennial at 30 minutes left, Cascade and Nugget at 5 minutes left, and dry hopped after six days with about 1 lb/ barrel of Centennials. It has a wonderful floral nose, followed by rounded grapefuity bitterness, and finishing crisp and dry with a little bit of lingering chewy hop resins.

A chocolate-forward dry Irish style stout, brewed for St. Patrick’s Day.

The nose is packed with lemon and has a subtle grassiness. Flavors of honey oolong tea and straw blend well into the smooth finish.

This mead has a heady perfumed aroma and flavors of lemongrass, clover, and fresh cut grass. Full-bodied with an aggressive and persistent bitterness that lets you know who’s boss.

Mr. Papsoe reflects sweetness and those who have had the pleasure of meeting him have found to their cost that he is sweet, obliging, and solid, yet also complex. He is to be enjoyed in small quantities, but nevertheless his alcohol and generous nature is a delight to be warmed by. Even though Mr. Papsoe is soft, he can easily be aged. Due to long-time aging on barrels, Mr. Papsoe has notes of vanilla, bourbon, and wood. One of the ingredients is a special produced dark Muscovado syrup, which provides him with his full body and sweetness. If you have a sweet tooth that you happily fill with sweets, this beer is particularly well-suited. Well, actually we would claim that we have filled adult candy onto bottles.

The Humidor Series is a rotating offering of Cigar City Brewing beer aged on cedar. Cedar has a more subtle effect on beer than more traditional woods like oak. But, we think that once you taste it you’ll agree that cedar deserves a place alongside oak in the brewer’s wood-aging toolbox.

Part of the Humidor Series beer. The base beer is Chaveta Dark Mild aged on cedar, but with a blend of two other beers. A one time release only available at the brewery in growler.
