Jai Alai India Pale Ale pays tribute to the original extreme sport. Jai Alai, a game native to the Basque region of Spain, is played on a court called a fronton. Jai Alai players attempt to catch a ball using a curved mitt, whilst the ball travels at speeds of up to 188 miles per hour! Proving they have a sense of humor the Spanish dub this game, with its ball traveling at race car speeds, """"the merry game."""" Tampa was once home to a busy Jai Alai fronton but sadly all that remains of Jai Alai in the Tampa Bay area is this India Pale Ale that we brew in tribute to the merry game. The India Pale Ale style of beer has its roots in the strong ales sent from England to thirsty British troops in India during the 18th century. To survive the journey the beers needed more alcohol and more hops (which act as a natural preservative). This “big” brewing practice made India Pale Ale one of the first """"extreme beers"""" and a favorite among the Queens military men in India. Eventually it became a favorite style of the new crop of American brewers seeking more flavor and complexity than mass-market brewers were willing to offer.

Leaves of Fate

Beers at Fieldwork seem to fall from the branches of our family tree with no rhyme or reason, slowly drifting to the ground only to be swept up and never poured again. It struck us that one of our favorite hop pairings had not been done in a while after the murder of an unidentified IPA from our line-up. To bring back the Citra and El Dorado romance we loved so dearly, we brewed up a new Double IPA; Leaves of Fate. This responsibly sized hop cannon is loaded with the aforementioned hops resulting in a Double IPA that is sticky to the taste with orange juice, tangerine peel, passion fruit, and honeysuckle. A fair bit of malt balances out the soft bitterness to make it a fairly hefty Double IPA that delivers from its beginning to its end.

Tocobaga Red Ale

The Tocobaga lived off the bounty of Tampa Bay hundreds of years before the arrival of the Spanish in the 1500’s. They were potters, tool makers and the only Florida natives to grow maize. The large platform mounds they built are still with us today, with one of the largest found near Old Tampa Bay in Safety Harbor, Florida. 2017 North Coast Sauvignon Blanc

Tasting Notes: our North Coast Sauvignon Blanc has summertime aromas of freshly shorn hay and a sweet honeysuckle bouquet. On the palate, layers of ripe pear, green apple and a hint of gooseberry. Its flavors flourish in the wine’s minerality, and finishes with a spry zest. Winemaking: Grapes from the North Coast appellation, a rather large AVA, are harvested from multiple vineyards chosen for their excellent site location and soil makeup. Chardonnay

Our Santa Barbara County Chardonnay is a complex showstopper with flavors of stone fruit and honey, balanced with subtle oak and delicate minerality. Because of the Santa Maria Valley’s notoriously long hang time, the grapes developed ripe, mature flavors. Minimal heat allowed for a long, slow ripening of the fruit, which resulted in concentrated and lively flavor profiles. Our Chardonnay is 100 percent barrel fermented, undergoing a cool fermentation with temperatures ranging from 52°F to 55°F. After primary fermentation, 60% of our wine goes through malolactic fermentation and the finished wine is kept sur lie for two months. The Chardonnay is then 100 percent barrel aged for up to six months using a combination of Burgundy French oak barrels and American aroma barrels.
