Harken back to the old world and the storied history of brewing. This 80 Shilling/Scottish Export style ale crafted for malt lovers with complex aromas and flavors of caramel, toffee, honeycomb, sweet brown bread/biscuits. A subtle nuance of low raisin/date-like fruitiness exists as we note that the beer is a bit drier then perceived with low-mild bitterness and a clean malty finish. Our take on a NE Style IPA; This juice bomb of an IPA is brewed with Azacca, Huell Melon, Idaho 7 and Mosaic hops and our “punch” blend of hefe/saison yeast.

Well balanced Keylime Gose

A rhetorical device, Kettle Logic describes a set of arguments that are individually true but contradictory when used together. So when your friend drinks your Kettle Logic Amber Ale and claims that, 1) I don't even drink beer. 2) I only drink lagers, and 3) I do drink amber ales but only on Wednesdays – today is Saturday... all of those could be true on their own, but they make a terrible argument when you have an empty glass and your friend keeps giving you excuses. The name of our golden sour ale was inspired by the heirloom Wrens Abruzzi rye malt provided by our friends at Riverbend Malt House. German legend has it that the wren cunningly hitched a ride on an eagle’s back to become the highest flying bird and was crowned as ‘king of the birds’- kuningilin. The spicy and earthy character of the rye malt used in this rustic refined ale is held aloft by a tart acidity drawn from our house strain of natively collected lactobacillus and crowned by a bright dry hop blend of Vic Secret and Amarillo hops.

Our newest strain, Doc’s Choice, was brewed to acknowledge the recent and unanimous 40-0 passage of Virginia’s SB726, which will allow doctors in the Commonwealth to prescribe cannabis oil to help treat diagnosed conditions and diseases, such as cancer, Crohn’s disease, and PTSD. This New England style IPA highlights a quintuple of aromatic hop varietals including Mosaic, Calypso, Galaxy, and Huell Melon, conscientiously administered to heighten your senses. Come…sit…and inhale earthy scents of grass and rose blossoms, as pungent, tropical fruit flavors of passionfruit, ripe honeydew, pear, and papaya lend to the bright, citrus flavor of tangerine. 3rd Installment of the rotating New England IPA series. Brewed with Cashmere and Mosaic hops.

We fermented, aged, and soured our imperial stout in regional bourbon barrels for nearly a year before blending in freshly brewed stout. We further aged this rustic refined ale on a massive amount of tart Montmorency and Rainer cherries. The result is a dark sour ale that has powerful notes of cherry and a just a hint malt sweetness on the nose that entices you to take another sip of this dark beauty. The flavor is an explosion of bright tart cherry dancing with the subtle coffee and chocolate notes of the base beer before fading into a dry, slightly sour finish.

That first bite of a ripe plum on a sun drenched spring day. There's nothing quite like that explosion of sweet tart flavored juice. The intense bright flavor shock is what inspired us to create our rustic refined Nine Plums ale. We started with a blend of our rye saison, native fermented and aged in wine barrels, and then introduced loads of fresh locally sourced plums and allowed the blend to age to the point of capturing one of our favorite fleeting memories.

Every great thing has to start somewhere. It just so happens that where we started brewing with our prototype – a simple, no-frills porter – got us to our signature “keep it simple” style. So, we named a beer after it. This beer’s deep ruby color houses slight chocolate and cola flavors in a lighter bodied porter. 5.4% ABV | Porter | Chocolate and Cola Flavor

Gose brewed with lactose, vanilla beans and blackberries.

Revenant IPA has full-bodied flavor from rich Pale malts generating a light amber hue. A blend of Simcoe and Citra hops to generate a unique and lively citrus aroma and flavor. This is a very refreshing IPA suitable for hopheads and everyone else, as well.

Amber Ale with low hop and a nice malty flavor. It is has a beautiful amber color, after the name, with a moderate ABV.

an American Pale Ale. It has a light amber color with plenty of citrus flavor and aroma from hops. It is refreshing and hoppy with sufficient supporting malt for a beer you will want to enjoy all summer long.

Medium bodied IPA.  Mango, apricot, and pineapple dance delectably on the tongue while sweet fruit and mild grapefruit zest tickle the nose.  All solidly built upon a slightly toasty malt core.

The Source Series® of rustic refined ales are the essence of the Carolina Bauernhaus brewing philosophy. The yeasts and bacteria used to ferment a Source Series ale are collected from one of the ingredients used to brew the ale. Source Series Apis is a golden ale native fermented with two strains of yeast collected from local honeybees. A simple grain bill and subtle hop character allow the yeast to take center stage. Local wildflower honey was added during the fermentation for a burst of honey aroma and flavor accentuating the character of the yeast.
