Hugh Malone

Hugh Malone begins with a grain bill featuring a blend of Maine grown barley, imported Pilsner, and raw wheat malt. At the beginning of run off, we add a portion of hops to the sweet wort in the kettle; a technique known as "first wort hopping". As the boil begins, a generous amount of Chinook hops are added for bittering. Later, in the whirlpool, the beer is hopped with a blend of Centennial and Amarillo, for aroma. This same blend is used, post fermentation, to lend additional hop character to the finished beer. The result is a complex brew with a malty palate, intense hop aromas, pronounced bitterness and a pleasantly dry finish.

Flavor elements building on and playing off of preceding elements, like a building wave; a growing crescendum of taste bud temptation; a wall of sound expressed through flavor and channeled toward your mouth. This beer isn’t for everyone. In many ways it is more than just a little weird. It certainly doesn’t fit easily into any category. In the spirit of all great things that are conceived in the moment, but perfected through passionate repetition it started life as an improvisation and grew from there. And it might not be for you. But if the thought of big spicy rye notes, a wallop of a hop punch, multitudinous layers of caramel, sweet malt and a respectable balancing gravity sound intriguing then you might want to wing it and give Improv a try.

Jai Alai India Pale Ale pays tribute to the original extreme sport. Jai Alai, a game native to the Basque region of Spain, is played on a court called a fronton. Jai Alai players attempt to catch a ball using a curved mitt, whilst the ball travels at speeds of up to 188 miles per hour! Proving they have a sense of humor the Spanish dub this game, with its ball traveling at race car speeds, """"the merry game."""" Tampa was once home to a busy Jai Alai fronton but sadly all that remains of Jai Alai in the Tampa Bay area is this India Pale Ale that we brew in tribute to the merry game. The India Pale Ale style of beer has its roots in the strong ales sent from England to thirsty British troops in India during the 18th century. To survive the journey the beers needed more alcohol and more hops (which act as a natural preservative). This “big” brewing practice made India Pale Ale one of the first """"extreme beers"""" and a favorite among the Queens military men in India. Eventually it became a favorite style of the new crop of American brewers seeking more flavor and complexity than mass-market brewers were willing to offer.

Upland lambics are fermented by wild yeast and aged in oak casks for over a year, which creates a tart, complex beer. We then add whole kiwis, giving the beer enticing aromas and flavors. Kiwi Rising - Double IPL

This is an intensely hoppy and strong lager that we refer to as a Double India Pale Lager. Over four pounds of hops per BBL of New Zealand hops (Kiwi Hops) were used in progressively larger hop additions throughout the brewing process. Four kettle hop additions, whole leaf hops in the hop back, and multiple dry hop additions infuse an intense floral and citrusy aroma. No kiwifruit or kiwi birds were used in the production of this beer.

Malefactor (Gilgamesh)

Previously known as Gilgamesh. Continuing our adventure into the realm of sour ale brewing, we designed a recipe to create an Upland version of a traditional Flanders Red. Melding flaked maize into a turbid mash and adding Belgian candi sugar during a long kettle boil, we prepared this ale for epic proportions. We then incorporated wild yeasts and other acetic and lactic acid producing microorganisms for a year-long oak fermentation in bourbon barrels, which had previously been utilized to age beer. The journey was worth the hardships.
