This double weighs in with a heavy amount of base malt making for a healthy final gravity. Although it carries a solid malt backbone, this beer is all about the hop bitterness brought by copious amounts of Citra and Mosaic. A mild brown ale in the tradition of Southern England. Chocolatey and sessionable, Boom!

A malty ruby-brown ale with a pronounced crisped-caramel flavor, smooth, lightly carbonated body, and a bready, slightly warm alcohol finish.

We split the first batch of beer brewed in our new brewery into three separate fermenters and used 3 distinctly different yeasts. The second version is an extra-special version of London Signature done with a special, fruity Belgian yeast strain and generously dry-hopped.

A slow-fermented Belgian-style golden ale with sweet cherries and a hint of peach.

Sweet and fruity aroma without being cloying. It has traces of orange blossom, tangerines and lemon. Acid balance is just enough to cut through the sweetness without being over bearing. A very flavorful mead with a terrific full bodied taste and finish. Could be sipped with a meal, with desserts or as an after dinner aperitif.

Mead with coffee beans added. We have added 12 coffee beans from the local Rising Star Coffee Roasters to each bottle of sweet orange blossom mead. The resulting mead retains the light, straw yellow color but now features a pleasing coffee aroma. The first taste is of coffee with a background sweetness of orange blossom honey. The coffee and honey flavors continue to the finish with a coffee and slightly sweet, long finish. Although nice as an after dinner drink, it would nicely complement moderately strong dishes like burgers or pulled pork.

This variant of Tarty Slip Berliner Weisse is brewed with cranberry. It is sweet and tart in flavor and pink in color.

A complex, strong, Belgian-style ale with a wonderful marriage of fruity esters and spicy notes including white pepper with a moderate balance of alcohol. Esters are reminiscent of pears, oranges, and apples. Pilsner malt is the base of this ale with additions of Aromatic and Crystal120 malts. Belgian dark candy sugar is added to increase flavor and alcohol. Perle & Tettnang Hops are added for bittering and to increase the spicy, fruity notes to complement the yeast characteristics of this style. As you enjoy this Belgian Strong Ale, you’ll feel the warmth and the good vibes from within. You may encounter the sudden urge to move your feet and shake your hips in the “Dancing Monk Style.”

A style originally brewed for Belgian miners, our grisette (meaning "little grey" in French) is low in alcohol and made from 50% white wheat malt, giving her slight sweetness and body. Rosehips are added throughout the boil adding hints of floral and tart notes that linger on the palate. Lightly dry-hopped with German Select Spalter for a spicy, citrus flavor and aroma. The saison yeast lends esters of lemon and herbs. Unique, delicate, golden & hazy, there is no other when you are with her.

Hallo Ich Bin Berliner Weisse with watermelon (2%).

Her majesty is tart, complex and changes from day to day. Our Flemish Sour Beer, brewed with a touch of raw rye and aged hops, is a blend of a one-year old oak-aged dark sour and a fresh, kettle-soured golden sour Both are fermented with three strains of saccharomyces yeasts, two strains of brettanomyces, lactobacillus and pediococcus.

This powerful version of a mid-western pale ale sweeps the palate with mango, lemon, citrus, tropical fruit and stone fruit, additionally accented with earthy pine and green pepper flavor notes. This multitude of flavor sinks deep into the taste buds, briefly clinging to the roof of the mouth to enliven the palate adding zest Flowery citrus notes dominate by mid-serving masterfully integrating with the patina of bitterness that finishes with a 5.5 ABV snap. The palate cleansing hop character comes courtesy of Mosaic and Equanot hop varieties from the Pacific Northwest. As the pale, tawny and orangey-gold body warms an intriguing volume of effervescence drives the mouthfeel and momentum to its lively citrus refreshing conclusion.
