Total Eclipse

Total Eclipse is our take on a rye porter, made specifically to highlight a specialty chocolate rye made by Valley Malt in Hadley, MA. Suprisingly this grain is not made or infused with chocolate. Basic rye is malted and then kilned at a specific temperature to create chocolate flavors. German Carafa malt is also used to create an intense dark color while keeping out astringencies caused by grain husks. Lastly, lactose sugar is added to give the beer a creamy mouthfeel. Willamette hops are added in moderation to keep bitterness low (22 IBU's). Total Eclipse clocks in at an even six percent alcohol by volume and is made with seventy percent local grain.

Kölsch is a good beer for mass produced lager drinkers to have when making the switch to craft beer. Thus, you provide the activation energy and let this Kölsch be your transition state as you change from beer drinker to craft beer drinker. Trappist Westvleteren XII

Considered the rarest beer in the world, "Westy 12" is brewed by Saint Sixtus Abbey (Sint Sixtus Abdij) in northwest Belgium; one of the seven Trappist monasteries producing beer. It has an ABV of 10.2% and uses the Westmalle yeast strain but all other details are speculation and the recipe is tightly guarded. The date stamped on the cap is a "Best After" date approximately three year after the day of production. The yellow cap is the only identifying mark of this beer as there is no label and they use three different bottles in production: plain, "Trappisten," and "Westmalle." The beer is not distributed anywhere in the world. The only way to acquire it is to visit the monastery. Young bottles tend to be rather boozy, yet, the alcohol is never hot or harsh. Dried, dark fruit esters come through in the nose and taste and are accompanied by intense melanoidins. The characterful Westmalle yeast contributes to a doughy aroma, low bubble gum esters (think Juicy Fruit) and a hint of black licorice. A very complex beer which improves with age.

Trauger Pilsner

Our Pilsner is assertively hopped with Hallertau and Tettnanger noble hops and has a great cracker-like malt backbone that finishes crisp and dry coming in at 4.4% ABV, which makes this one highly drinkable (which is the point, duh). We named this beer in honor of the Trauger family of Bucks County who came to America in 1747 and were among some of the earliest German immigrants to the area. In 1767 Christen and Henry Trauger purchased two farmsteads in Nockamixon Township and have been a part of the fabric of this county, state, and country ever since. Five generations and 6847 family members later our Head Brewer somehow got lucky enough to be a small leaf of that family tree, and this is our way of looking back not only on that history here in this country, but also our family’s history dating back to Germany. Ironically enough, the Trauger family’s German heritage predates the introduction and widespread popularity of the Pils style, but nonetheless, this beer is brewed and named in their honor.
