Apricot Au Poivre Saison

A Saison is a Belgian Farmhouse Summer Beer, referring to the simple fact that very small "farmhouse" breweries typically made these beers.  Lighter in alcohol, ours is 6.8% (not exactly light but that’s just us!) and golden to orange in color and unfiltered. Ours is spiced with both Apricot puree and Black Pepper.  The taste is light, refreshing and nicely fruited to start. Medium mouthfeel. After taking a drink, the black pepper dries the palate and creates a nice tingling sensation on the tongue.

A future Ibex Series Release, Schlafly Apricot Berliner Weisse (or Weiβe) is a cloudy, sour wheat beer from Northern Germany dating back to the 16th Century. It is 4% abv and 5 IBU’s. The beer is fermented with our house, “Cosmic Debris” culture of brettanomyces and lactobacillus. In this version we move beyond the traditional base beer and add over two pounds of apricot puree to the fermentation showcasing the fruit with a nice sharp acidity and Brett character.

Apricot Gose

Starting with a traditional German malt bill consisting of 50% Pilsen malt and 50% wheat malt, we then kettle sour the wort, meaning we innoculate it with lactobacillus bacteria after mashing and wort run-off but before racking to the fermenter. A generous apricot addition complements the tartness of the base beer and the sea salt and coriander add to the complexity, producing a beer that is tart, dry, salty, fruity and extremely refreshing.
